I have upcoming ADR at Olga's cantina.

My understanding is that the tables are a combo of standing at bar height table or standing at the bar and that seating at tables is very limited.

When you check in for your ADR do CM's assign a bar height table or space at the bar to accommodate your party or one of the limited dining tables ?

Is there wait staff that take your orders or do you have to order from the bar ?

The CM's take you to the next available area, I think, I don't know for sure. We've never requested a certain area or seat. We just go where they take us. Also, in the dozen or so times we've gone in, we've never had a seated table or a place at the bar, only the standing tables. I usually see families with younger children at the seated tables. There are servers to take your order. You also get put with other parties. That's kinda fun! We've met some very nice people. Hope you enjoy!

Next open spot. You can make a request which may or may not be honored depending on how busy they are and if you're willing to wait, but it's totally at their discretion.

Yes they are. We were a party of 4 in July and were placed at a standing bar table. The table sort of has a natural divider and we had one side and a party of two had the other.
