I am thinking two days for MK and two days for Epcot. I don't want to be super super rushed. We would like to take our time to some extent. Is two days enough to be able to be somewhat leisurely in these two parks?

That sounds good. Two to three days for us at MK. It is enough in one trip for us. And we also do two at Epcot. Ecpot is huge and it's hard to hit Epcot in one day especially when I have two small children.

If you plan your time wisely, be realistic about expectations and arrive at the parks at opening, use fastpass on the biggies, stay till close.
You should be able to see an awful lot.
However having said all that we have been to WDW over 15 times and are still trying to get it all done.
Plan well, relax and remember that you are there for fun!

we'll be spending 3 half days at MK - totaling about 2 full days
