If my American Airlines flight departs from MCO at 10:20a, will I be OK checking in my bags for RAC by 7a? Also, if using RAC, I don't have to bother checking in with the airlines 24 hrs before? Do I need to sign up for RAC before departure day?

I think DME is about to go back to the normal 3 hours estimate, so yes, I think that'll be OK once that changes again.

Do you have to pay for the bags? If so you need to do that ahead of time. I personally check myself in.

By arranging DME they already have your info, so I don't think you need to do any extra signing up.

I will need to pay for bags. Just to clarify, because I need to pay, I would need to pay directly with the airlines before heading to the RAC check in desk?

I won't be using ME from MCO to WDW. Only need it for departure.

Yes, you need to call the airline and pay the baggage fee before going to RAC. You can do this the day before (I'd do it within 24 hours of your flight). I would recommend doing the online check in as well, it won't hurt anything.
