I tried this recipe last night and wanted to share. Of course I didn't follow it exactly - but it was really good!

Fresh Fruit Taco

3 tablespoons sugar
1 teaspoon ground cinnamon
4 (6-inch) flour tortillas
2 tablespoons water
Vegetable cooking spray
1 pkg. (.3 oz.) instant sugar free vanilla or chocolate pudding mix (four 1/2 cup servings)
1 teaspoon grated lemon peel
1 teaspoon vanilla extract
1 DOLE Banana, peeled, sliced
1 DOLE Mango, peeled, sliced
1 DOLE Kiwi fruit, peeled, sliced
1/2 cup DOLE Raspberries

Combine sugar and cinnamon. Brush tortillas lightly with water. Sprinkle sugar mixture over both sides of tortillas. Spray large custard cups with vegetable cooking spray. Gently press tortillas into cups. Bake at 400° F., 10 minutes or until lightly browned. Cool. Prepare pudding according to package directions. Stir lemon peel and vanilla into pudding. Combine banana, mango, kiwi and raspberries, in small bowl. Arrange tortilla shells on dessert plates. Spoon about 1/2 cup pudding into each shell. Spoon fruit onto pudding in shells.

I used only fresh strawberries for the fruit. I had s/f White Chocolate Pudding, so I left out the lemon peel & vanilla. Instead, I threw in a few white choc morsels that I had leftover from C'mas cookies - for the non-diabetics. This was a HUGE hit here!

We make strawberry tacos here too! We actually deep fry the flour tortillas in a skillet to make taco shells, then dredge them in cinnamon sugar but baking them sounds so much healthier! And a prettier presentation too. Then it's just vanilla pudding, strawberries and whipped cream. I'm going to have to try the white chocolate.
 
I have to admit that I thought the shells could have been a bit crispier. They would have gotten too dark if I'd left them in longer, though. I was thinking of using the Misto to spray the back of the tortilla with oil next time. (I realized that I forgot to spray the custard cup - but they didn't stick.)

OT, sort of - I have been making Tortilla Soup a couple times a month since we discovered it. DD loves to snack on the crisp tortilla strips that go with the soup. They're just flour tortillas cut very thin, sprayed with oil (the Misto again), sprinkled with salt & baked until golden brown. (I think the recipe called for them to be fried, but we try to watch the fat around here.) Anyway, I was feeling guilty that my family never gets dessert unless it's a special occassion. So I did some strips with cinnamon & sugar sprinkled on instead of the salt. They really enjoyed them, too!

I do something like that for DS. Since he's only two, I cut shapes out of flour tortillas with cookie cutters, brush with melted butter (doc says to use real butter for him for a little longer), then sprinkle cinnamon sugar and bake until they are crispy. DH and DS both love them.
 

We celebrated our Mother's Day today and had my mom, aunt and grandmother over. My daughter and I made taco salad (which is a variation of the recipe under the thread Main Dish Salads) and fruit tacos for dessert! We served the taco salad in my Mickey Mouse salad bowl that I got for my birthday (his gloved hands are the "tongs"!! :D ) and used my Mickey Mouse plates for the dessert. We followed the recipe except we used strawberries, bananas, kiwi, topped with a dollop of Cool Whip and garnished with a strawberry. They LOVED the fruit tacos! They even had me take a picture of them, and copy the recipe for them.
 
This sounds yummy and I bet it is something my girls would like to eat.
 
This sounds so good! I'm definitely going to have to try it this summer! :)
