I finally took the time to make this recipe. It was really good! Unfortunately, it's been 11 months since we were there, so I can't really vouch for it's being exactly as we had it. . . but it was delicious! 
A couple of weeks ago I read the suggestion on this board about putting meat in a ziplock bag to marinate. It was great idea! One of the reasons it took so long for me to get around to making this one was the lack of space in my refrigerator. (It marinates for 24 hours.)
I used the amounts to make 1/3 cup of the spice - which was enough for 1 chicken. I used a 4.5lb pack of boneless, skinless chicken. It fit nicely in a gallon bag - although I needed to coat the chicken first. There was probably enough of the marinade to cover 6lb chicken. We grilled the chicken since I don't have a rotisserie.
Now I just need to figure out how to serve the rest of the chicken tomorrow.
