I finally took the time to make this recipe. It was really good! Unfortunately, it's been 11 months since we were there, so I can't really vouch for it's being exactly as we had it. . . but it was delicious! :D

A couple of weeks ago I read the suggestion on this board about putting meat in a ziplock bag to marinate. It was great idea! One of the reasons it took so long for me to get around to making this one was the lack of space in my refrigerator. (It marinates for 24 hours.)

I used the amounts to make 1/3 cup of the spice - which was enough for 1 chicken. I used a 4.5lb pack of boneless, skinless chicken. It fit nicely in a gallon bag - although I needed to coat the chicken first. There was probably enough of the marinade to cover 6lb chicken. We grilled the chicken since I don't have a rotisserie.

Now I just need to figure out how to serve the rest of the chicken tomorrow. ;)

I'm thinking this one might work in the freezer in the original ingredient amounts. I could make the marinade and divide into meal portions then freeze. It would marinate as it thawed in the refrigerator.

I gotta try this one!

I think you're right - doing this in the original amounts & freezing makes a whole lot of sense!

We didn't have the salad with the left-overs last night as DD wasn't thrilled with the dressing & DS & his fiance don't care for salad at all. So I served the chicken just plain & warmed up with stir-fried green beans, Potatoes with Afritude (Boma) & Sweet Potatoes in Root Beer Sauce (H&V). I keep forgetting, though, that the Potatoes with Afritude always seem to come out SPICY! (I don't remember them being that spicy at Boma!) I really should have made something like Chef Mickey's Parmesan Potatoes & just plain green beans. The meal came out a little too spicy. It was good, but needed a more bland food to complement the chicken.

I got this one at CopyKat.com, not directly from a Disney source. DS thought they were really close to the ones from H&V. I had to laugh - when we were researching before making PS, everyone thought these sounded gross. We were all surprised at how good they were! :D I wish, though, that someone made a sugar free root beer that didn't have NutraSweet so I could have more than a bite. Maybe someday . . . :(

Sweet Potatoes in Rootbeer Sauce
CopyKat for Hollywood & Vine

1 quart rootbeer
1 cup bourbon
1 ounce lemon juice
6 ounces water
3 ounces corn starch
2 ounces butter
pinch of ground cloves

Mix corn starch with water, set aside. Bring all other ingredients to a boil in a pot. Add corn starch mixture. Sauce is now ready to be poured on sweet potatoes.

Slice fresh sweet potatoes in 1/2" circles, bake in 350 degree oven until soft. Remove from oven, pour glaze over and they are ready to serve.
 
I am SO glad that this recipe worked out for you!! I have yet to try it, but I have part of the seasonings...I'm looking for the annato seeds still! :rolleyes:
 
We have a specialty store nearby that has fresh spices, teas, coffees & gourmet cooking goodies like shaped pasta, lemon curd, utensils, etc. I just checked and they don't have their Web site up yet - they're working toward that. In the meantime, you can call & they'll ship things to you if you really can't find the annatto. (NO! I don't own stock - I just like this place! ;) They had both seeds & ground - I just bought them already ground, as it was easier. If you want their number, you can PM me. It was the only place around here I could find the annatto.
