When we ate at Shula's - looking for a quiet romantic dinner - the Dolphin was hosting an IT conference and we were next to a table of 15 IT executives on expense accounts drinking heavily (it isn't always the kids). I didn't find Yachtman quiet at all - but the wine room at California Grill was quiet. Artist's Point is often "quieter" - but there are no guarantees at Disney that the table next to you won't be populated by a drunk man, a woman with a loud nasal voice who peppers her speech liberally with four letter words, and their seven children who have been raised in a barn (although I suspect that is the absolute worst case - and frankly - not that much worst than the IT execs).
We get a drink "to go" from the lounge (or pour our own) and enjoy the quiet of our room.
