Quiet restaurant "hide outs" for week after Easter?

Can anyone suggest any quieter spots to eat at resorts during the week after Easter? I am already afraid of the crowds...we don't plan on doing tons of parks but would like to try a few new places. How is Trail's End at FW? How busy is it for dinner? Any other "hidden gems"? We may even try Garden Grove for a character dinner.

We like the wave. It tends to be infrequently visited especially at lunch time.

Kona Cafe is a nice choice. So is the Grand Floridian Cafe.

My vote goes to Olivia's at OKW. It often seems as if most people don't even know OKW exists. The food at Olivia's is pretty darn good.

My top 2 would be Sanaa at AKV and Turf Club at SSR. Both offer pretty good food and we've had great luck at some pretty low key dinners at these places. Olivias at OKW is decent too but it's not been as quiet in our experience.

Most have named my choices. Any resort restaurants. Another one not mentioned is Boatwrights and Captain's Galley.
