The brochure says a meal = an entree, a non-alcoholic beverage and a dessert. We typically don't eat a dessert every time we eat lunch and dinner. Is there any "wiggle-room" in what you get? Can we substitute a side-dish instead of a dessert?

In my experience, they make you get a dessert. I did convince them to give me grapes (the kids side item) a couple of times but otherwise they're pretty firm on this.
 
I've been able to "substitute" fresh fruit, a bag of chips, or a bottle of water for the dessert part of my QS meal. What you can get varies by location and what is available.
 
If by a side dish you mean fries or onion rings or stuff like that, no. But at times they will allow you to substitute fruit (the packaged kind they use for the kids meals), maybe a bag of chips, or a bottle of water. What you can get, or if you can get anything at all as a substitute, will depend on which restaurant and maybe even on who you ask.
 

Yeah, I'm not talking about some full side-dish. Fruit or something like that would be ideal.

Seriously, eating dessert twice a day for 6 straight days is NOT something we're accustomed to!
