This might be a silly question - with the quick service plan or really any buffet for that matter - are we able to take leftovers out of the restaurant?
Quick service, yes. I'm pretty sure buffets don't let you take stuff home unless it's a cookie or a piece of fruit or something.
At WDW buffets are considered table service (meaning the type of restaurant where you sit at a table, you get your own food, and a server brings you drinks and clears your plates). Quick service restaurants are the ones where a server does not come to your table at all (with the exception of Wolfgang Puck Express).
buffets...no take-out allowed. And as TDC Nala said, all buffets are table-service restaurants at Disney (one TS credit per person)
Quick service--ask for to-go boxes when you order if you think you won't be finishing your food because most of the food comes served "open" like on a paper plate (and sometimes there's long lines if you have to go back later to ask for a to-go container.)
