If have only 1 person on the dinning plan , will resturants allow you to purchase 2 meals at one time on your card. I assume you can use as many snack credits as you wish because people use them on take home items. I would like to treat a friend visiting for 1 day for her meal.

Yep, you can use all your meals at once if you would like.

Actually no! Your room key will show how many people are on the DDP (for example 2A 1C). The cashier is only allowed to charge as many meals are there are people listed on the plan. If you look in the Frequent DDP Questions thread at the top of this DDP you will see:

Can I share meals with guests not on the Dining Plan?
No. The Dining Plan cannot be shared with guests who aren't registered as part of your hotel reservation.
