There's the Starbucks and Yak n Yeti was serving breakfast in November. I haven't seen anything saying they have stopped, but the different breakfast offerings at AK have seemed to stop abruptly.
You might try the Harambe Fruit Market, an open-air venue near the safari ride. You can get fruit, pretzels, yogurt, and some other snacks there. I had a Mickey pretzel and cubed watermelon for breakfast in December. Delish!

It is something Animal Kingdom certainly lacks, good quick service breakfast options that are more than a snack or piece of fruit. I typically eat in my room and then have lunch in the park.
We went over to yak and yetis quick serve after rope dropping FOP, Navi and Everest. It wasn't busy because most people were still in Pandora. We shared the breakfast tacos but I think the breakfast sandwich is a better choice.
My favorite AK breakfast is a pastry and hot tea from Anadapur Tea Conpany after a ride or two on Everest. We always manage to go to AK on the coldest days of the year, so hot tea hits the spot.
We did EMH and hit a 9am FoP on our Last day, then went to HS. We had breakfast at Rainforest Cafe on our way out of the park (no reservation needed b/c of Landry’s Select Club) and that worked fine. We had planned on hitting up a QS place at AK and couldn’t find anything worth getting.
