Quick question for Magic Kingdom

Sorry, but I can't seem to find a good answer so I thought this is the place to ask. What is the difference between Once upon a time and
Happily ever after? I think HEA is the new projection show that replace wishes but what is Once upon a time and why is it right after HEA?

OUAT is simply a castle projection show after HEA which is the fireworks extravaganza
