Made this the other night from Pam Anderson's cookbook - The perfect recipe for losing weight and eating great. Very thin, like a cracker.
Makes 4 flatbread pizzas (small)
1 cup bread flour, plus extra for dusting (I used all-purpose flour)
1/2 teaspoon salt
1/3 cup warm water, plus extra if necessary
1 teaspoon extra-virgin olive oil
Oven 500 degrees
Mix flour and salt in a food processor (I don't have one just used a fork)
Mix water and oil and pour over flour mixture; process to form a soft dough ball. If dough is too stiff (hard-clay texture), process in another tablespoon of warm water. Continue to process until dough is well kneaded, about 15 seconds. With floured hands, turn dough out onto a lightly floured surface and cut into quarters. Working with one quarter at a time, roll dough out to about a 12-by-4 inch rectangle, dusting with flour and turning as necessary to keep it from sticking. (I had no trouble at all rolling it out, no sticking.
Line a large cookie sheet with parchment paper or a silicone mat. (I used cornmeal). All 4 flatbreads should fit on the same sheet.
Adjust oven rack to lowest position and heat oven to 500 degrees. Place dough on a cookie sheet. Bake about 10 minutes until spotty brown. (Watch closely, so it doesn't burn) Then top pizza with sauce and cheese and bake til cheese melts (I lowered oven to 400)
For one cup of flour, it was a good snack for the 4 of us
