Quick Dinner ideas????

Anyone have quick dinner ideas for vacation? We are not eat out people we'd rather prepare our own food, our villa has a microwave and stove. What can we prepare thats easy and cheap?? We are going to Atlantis and we hear the food is very very $$$$ there so eating in will be nice and cheap. I'll have to pack alot of snacks to bring with us to as we hear they are very $$ there. We will hit their grocery store. I hope we can find ideas.....

Check out those frozen pasta dinners (Bertolli, I think?).

Are you driving? I always do 2 or 3 prepared pasta or potato salads when we go to the beach (efficiency apt.), and just load them into the cooler for the drive. They keep great for 2-3 days. I also make a batch of pimento cheese for quick sandwiches and snacks.
 
NO we are flying and plan to pack a suitcase full of non perishables. I'd love to pack a cooler of frozen foods but we are staying at a hotel the night before our flight. Don't know how long frozen meats will stay frozen in a cooler.
 
get a crockpot! there are tons of easy receipies for those. I have a roast in mine as I type.

Spaghetti obviously, fajitas, sandwiches.
 
Pre bagged salad. Bag shredded cheese. Bottle of ranch dressing. Bottle of Pace picante. Small can sliced black olives. Deli chicken strips. Chunk the strips, put on top of the cheese/olive topped salad. Mix the ranch and the pace together. I add blue tortilla chips to ours, too. This is a sorta-copy of a salad we get at Applebee's. You can literally dash thru any store and grab all of the items on a whim. That's why I like it! PLUS, my picky kids will always eat it!
 
another idea... get one of those little sandwich presses. Compact in size and only cost about $15.

When we get a condo this is what I get:

Eggs
Bacon
Ham
Milk'
Coffee
tea
OJ
Granola Bars
Salsa
Nacho Chips
Romainne lettuce
cooked chicken
baking potatoes
sour cream
bag shredded cheddar
can tomato soup
Mayo
ice cream
root beer
Bread
english muffins
garlic Butter
1lb cheese
1/2 lb ham
lemon
'bag carrot
frozen veggie of choice
ranch dressing
2 Large tomatoes
onion
box pasta
spaghetti sauce
small sprinkle cheese
fruit salad
yogurt

From this I make:

breakfast:
Ham, egg and cheese on english muffins
scrambled eggs and salsa w/breakfast potatoes from leftover baked potato and onion
eggs and bacon w/toast
fruit salad w/yogurt
coffee,tea,juice

we usually eat lunch in parks

snacks:
carrotts
chips & salsa
nachos
granola bars
ice cream or root beer float
fruit salad
pitcher of iced tea w/lemon

dinner:
BLT sandwiches w/carrots
Spaghetti and sauce and sprinkle cheese
english muffin pizzas
ceaser salad w/chicken
chicken and baked potato with sour cram and frozen vegtable
Chicken and cheese quesadillas w/salsa and sour cream
grilled ham and cheese sandwiches w/cream of tomato soup
 
I think Bertolli also has shelf-stable packaged pasta dinners? Don't know how good they are, but one thing I am always wary of is how much salt is in the shelf-stable/packaged stuff (like Bertolli or NutriSystem). Maybe also take a look at "camping food" in an outdoorsy-type store(camping, Eddie Bauer, Bass ProShops, etc). You might come up with stuff that isn't heavy weight-wise and is easy to fix. I would also suggest that any new foods you are taking on your trip?...make sure your family will EAT them before you buy a lot/before you pack. That would be awful, if you got to your condo & everybody hated the new foods...

Oooooo..you do know that as you eat up all that suitcase food, souvenirs will take their place :) !

You have no idea:rotfl: We are going in April and will not have a kitchen so I have to cut back on what we get but I have my menus planned and budgeted already.

See i knew where to come to get great ideas!!! Now only if you all were Atlantis experts I'd be siked. I go to the Paradise Island Forums (tripadvisor) but they are very slow, hardly any responses to posts. Not like the DIS thats for sure, you guys are the BEST!!!!!!
