Do you have a recipe that fits that description? If so, would you be willing to share it for all to enjoy?
 
This is more of a bump, because it could be interesting :goodvibes

My cheap, healthy, good recipe is

sweet potatoes (maybe 6 large ones)
Sliced onions
sliced kielbasa (a pound)
some dill and salt

simmer in a crock pot and freeze in portions.

Defrost when you are hungry.
That is the quick part!:thumbsup2
 
just posted this on another link...nice, quick , cheap easy, healthy side dish.... Take the pre-shredded broccoli salad sold in bags in the produce section-- add toasted slivered almonds and dried cranberries add a favorite vingerette like a raspberry or white wine vinegarette..
 
Couscous Salad: I use a box of the Near East couscous mix when I'm making it for my family. Only use a tiny bit of EVOO. When it cools, I add black olives, grape tomatoes, fresh parsley and diced cucumbers and lots of fresh lemon juice.

I also do the same thing with taboule mix.
 

Grilled Asparagus-snap the stems at the natural breaking point-drizzle with a small amount of EVOO and toss to coat-put them on the grill and grill them about 5 minutes turning a couple of times. Squeeze half a fresh lemon over and sprinkle with a bit of sea salt. YUM!
 
Crockpot Chicken Mexicali

Cover the bottom of a crockpot with chicken breasts
Pour a jar of chunky salsa (I use medium) over the top of the chicken breast
Pour a can or two of whole kernel corn over the top

Cook 6-8 hours on low, shred chicken breast and mix together. It is really good served over rice.

This has been a huge hit every time I've made it.
 
Zucchini ribbons - faux pasta

3 medium zucchini - using a potato peeler, peel all but the center mushy core
2 triangles of Laughing Cow Light cheese - I like the herb and garlic
couple of Tbsp's chicken broth
dash of white pepper
dash of sea salt
dash of black pepper

Toss it all in a frying pan and cook down until the zucchini softens
Serve
PSA The zucchini cooks down very quickly

I served this last night with BBQ'd marinated chicken breast

The marinade:
In a large ziplock bag add however many pieces of chicken you need
sprinkle both sides with lemon juice, a bit of sea salt and black pepper - allow to marinate overnight or at least all day.
 
As a mid-afternoon snack -
1 jicama, peeled and chopped
1/4 cup lime juice (fresh is best)
1 T honey

Depending on the size of the jicama you may need to add more or less dressing and it usually makes several servings. Sometimes I add celery salt too.
 
I have a quick, cheap, and not completely unhealthy recipe:

Ingredients
1 pound ground turkey
1 (1.25 ounce) package taco seasoning mix
1 (15 ounce) can black beans, rinsed and drained
1 head iceberg lettuce, shredded
2 tomatoes, diced
1 (10 ounce) bag tortilla chips, coarsely crumbled
1 (8 fluid ounce) bottle thousand island dressing


Directions
1.Heat a large skillet over medium-high heat, and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Mix in taco seasoning mix as directed on package. Remove from heat.
2.Combine the turkey, black beans, lettuce, tomatoes, and tortilla chips in a large bowl. Toss with salad dressing. Serve immediately, or refrigerate for an hour before serving.

Yikes! I didn't realize it had that much sodium and fat. Ok, not at all healthy, but at least it uses ground turkey and it's a nice change from regular taco salad.
 
I fix couscous (plain) with frozen mixed veggies. I add a little chicken flavoring along with a curry powder, and other seasonings. You can also add some pre-cooked chicken to the mix.
 
Omelets are quick, cheap & healthy when loaded with vegies. I made one tonight. :)
 
Stir Fry
Couple of chicken breasts or tenderloins, cut up into strips or chunks
1 bag Steamfresh veggies ( I use Broccoli or Stir Fry Mix)
Bottle Stir fry sauce
( I love the General Tsos Sauce get it at BJS)
Brown the chicken breasts in a pan in cooking spray, toss in a bag of Steamfresh Veggies (I usually microwave them for most of the cooking time bfore tossing them in the stif fry) then add the sauce

Serve over brown rice or whole wheat pasta

Cola Chicken

3 or 4 chicken breasts
1 jar salsa ( I use Medium)
1 can DIET coke

Dump all in a saucepan, simmer until chicken cooked through, then turn up the heat and let it cook down into a sauce. The diet coke & salsa makes a nice thick sauce.

Serve over brown rice or whole wheat pasta.
 
Baked potato - in the microwave, only takes 5 minutes. Top with coldcut turkey, low fat cheese, fat free ranch dressing. Quick, easy, comfort food :goodvibes
 
Steam, boil or nuke broccoli florets and drizzle on some Gulden's Spicy Brown Mustard.
