Quick (and Inexpensive) Dinner Recipes?

Meatball Subs

1 bag of frozen meatballs
1 jar of our favorite spaghetti sauce (we like Newmans Own Sockarooni)
1 bag of shredded mozerella cheese
1 bag of sub rolls split.

in the morning dump the frozen meatballs, the sauce and enough water to just rinse out the sauce jar. mix well to coat the meatballs. Place on HIGH and walk away. At dinner time. split the rolls and fill with meatballs and some sauce. sprinkle with cheese and if you like put under the broiler in the oven to melt the cheese. I usually serve them with a fruit salad or chips.

COLA CHICKEN
3 or 4 chicken breasts
1 can (12oz) diet cola
1 cup ketchup

Place chicken in non-stick skillet. Pour ketchup and cola over top. Bring to boil. Cover, reduce heat and cook for 45 minutes.

Uncover, turn up heat and continue to cook until sauce thickens and adheres to chicken.

SPINACH CHICKEN BAKE
2 cup diced chicken, cooked
1 10oz pkg frozen spinach
1/2 cup fat free sour cream
1/2 cup light mayo
1/4 cup mozzarella, low moisture part skim
1 cup parmesean cheese, reduced fat

(I use Mrs Dash to season chicken)

Mix together sour cream, mayo and cheeses with 1 tsp garlic powder.
Mix half cheese mixture to chicken. Place in baking dish (8x8 or 9x9) and pack down. Spread remaining mixture over chicken. Bake on 350 for 30 minutes.

The Spinach Chicken Bake sounds yummy and I love to "hide" the veggies whenever I can. Where does the spinach come into play though? It's not in the directions. Sorry...I am a very literal person that needs step by step instrucions. ;)

LOL That would help, wouldn't it? I fixed it.

Just stir the spinach into the chicken and then add the cheese mixture. :)
 

Ok... I just made this tonight for dinner, and it is excellent!!!!! Google Bisquick cheeseburger pie and it will pop up... Now because this is the budget board, here is my twist.
add 1 cup zucchini as a sub for half of the ground meat. Zucchini is so cheap in the summer, and this is a great use for it. I didn't peel mine. Just shredded it with the skin on, but if you were hiding veggies, if it were peeled you would never know it was there:cool1:

I've made that cheeseburger pie before and loved it, but what a great idea to add the zucchini as a sub for meat! I'd love to get a vegetable in with that pie, and that's the perfect way to do it. :thumbsup2
