Questions about July 1-5

We are looking to go down from July 1-5. We have been many times before, so are not looking for a commando touring trip, more like a laid back one. I think we probably would only want to go to Epcot and MK, and probably not go to a park on July 4 at all.
My questions:
1. How crowded will the parks be other than on July 4? I went down with one of my friends 2 yrs ago on July 4 weekend, but I can't remember how crowded it was at all, except for Epcot on the 4th right before Illuminations.
2. Will the 'traditional' EMH be in place at that time, or will the extra morning/night hours be used? I saw there are to be enights in July, so I'm guessing it will be normal EMH.

Hey Pooh (and fellow NJ-er), we will be in WDW at the same time.

I have been told that the parks are incredibly crowded on 7/4, so we are planning on Epcot that day (more spread out). I'm sure MK will be JAM PACKED!
