Do these places take ADR's?

No, neither take ADR's.
Beaches and Cream is a very small space, so it is very crowded at traditional meal times and as Epcot closes. The best bet is to go right as they open in the morning for lunch or other non-traditional meal times.
There will be a line at ESPN to get in. If there is a big game going on it is long and very crowded. It is possible to sit in the bar and eat and we have done that.

We went to Beaches & Cream at opening the day before Easter (very crowded time) We were seated immediately and loved our meal there.

The food is very simple, but it's nice to get a TS type rest for a CS type price!

If you possibly have room - try the kitchen sink!

That really depends on when you go. We have been several times and have never had to wait in a line.

There have been times that ESPN takes same day reservations. I was there when the Tampa Bay Lightning were in the NFL finals and they started taking reservation for the game when the restaurant opened. It was a line out the door if you had no reservation. If you are there during one of the big Bowl games (college or Super) you may have the same situation.
