Question re: Chef Mickey's and nut/egg allergy

I know my DD will want Mickey waffles at Chef Mickeys. I think I read somewhere that they can make an egg free waffle using Bob's Red Mill mixes...but I went to the grocery store and saw that the Bob's Red Mill has a "manfactured in a facility that processes tree nuts."

Since she is Peanut/tree nut and egg allergic we avoid all items with those warnings.

I'm wondering what other accomodation could be made? Has anyone else with both tree nut AND egg allergy had the waffles?

I have a recipe for an egg replacer that is just water/oil and baking powder. Do you think I should bring that with me or contact the Chef and see if they would be willing to make her waffles with the "regular" mix (if it's not Bob's) and the replacer? Or is that asking way too much.

The egg replacer that is used in the allergy waffles is applesauce. I don't have any experience with severe nut allergies, only more mild ones where cross contamination of the level of Bob's Red Mill isn't a concern.

Ask to have the chef call you at home to discuss your options. Special Diets will arrange this for you if you ask when you send in your questionaire.
 
I had another thought....we are leaving next week. Should I get the phone number of the Chef Mickey chef and call in the next few days or just stop by once we arrive as we are staying at BLT? Our ADR isn't until later in our stay.

I was pretty specific on my Allergy Request from stating she can't have "made in a facility" etc. BUT I suppose it can't hurt to contact them in advance?

Does anyone know if they use a waffle "mix" for the regular waffles (and what brand) or is it just made from scratch - flour, milk, etc.

Maybe they will be willing to do the regular pancake/waffle mix with applesauce instead of eggs....I'll post back if I find out more info. I sent Special Diets a follow up e-mail to ask to contact the Chef Mickey chef.
 

The concern I'd have is that they'll only use the allergy mix in the decidated allergy waffle press. I don't know what kind of regular pancakes they use, but an egg free version can't be used in the typical dedicated allergy waffle press for cross contamination reasons. Hopefully they have a nut free dedicated press, or maybe the regular mix is nut free, but if it's the regular press then I'm not sure how the cross contamination of eggs (assuming there are eggs in the regular mix) would be. You'll definitely need to discuss this with the chef. Chef Mickey really was one of our best allergy experiences though it was for dinner. I'm sure they'll figure out a way to take care of you.
 
I sent my e-mail with follow up yesterday and Chef Rob from Chef Mickey's called me tonight :cheer2:. He was very helpful and said they use Namaste Brand waffle mix for waffles - it is dairy, wheat/gluten/nut among other allergens-free.

I guess they use rice milk and no added egg to make the waffles. He said to confirm with the Chef on Duty which mix they are using that day and to make sure it's the Namaste (or they would make up a batch since it's readily available).

He also said he was going to try and get us the Divvies popcorn and jellybeans as an available item at the Contempo Cafe (they def. have the cookies, he said they don't normally have the other two items). I just have to say so far I'm impressed. :cheer2:

Namaste! That makes sense. I know CM makes cupcakes that are GFCFEFNFSF as well but I never thought to ask about a mix. For some reason I assumed they made them from scratch but I bet they use Namaste mix for those too. FYI: Even though you're there for breakfast, ask for dessert anyway. Those cupcakes are GOOD. They're also iced which was a huge treat to my kids. These were the only iced treat they had the whole trip.

They may use rice milk, though they may use apple juice instead of milk and applesauce instead of eggs. That's what the couple chefs I asked said they use (my kids can use soy milk but they said they use apple juice). They turned out so good this way that now that's what I do at home when I make pancakes and even in some of my baking.
