Question on Trip in February

I was wondering if anyone can give me money saving tips for our trip to disney feb 9 through feb 15, 2002. The hotel is paid for through my parents DVC membership. We are staying at Old Key West Resort.
I am expecting between the two of us to take down about $1700 in cash . Does that seem like enough for food and entertaiment?
i already got the airline tickets (which by the way are expensive due to disney cruise line buying out all tickets from north west airlines!)
Also does anyone have any suggestions or tips for going in february?
What is the weather like? How about the crowds?
We are going on an off peak week. School wont be out till the following week.
I ahve gone in the summer and I have gone every year since last year in october so i dont know what to expect in february.

Weather is mild. Normal daytime highs are between 65-75. Lows can vary from the upper 30's to about 60.

We wnt for the first time in Feb this year(we go May,Sept and Dec)...the weather was great not hot not cold went swimming and NO LINES....I really liked going in Feb...we may try Jan in 2002 as we have never gone in Jan...also the airfare was really cheap 100. Rt frim SW...GO you will have a great time...Marianne
