I'm baffled by Devonshire cream. Is it the same as clotted cream? What does it taste like? In my imagination it tastes like very thick, sweet, whipped cream. How far off am I?

TIA

I started a thread along these lines a few months back on the UK board.
Ask there and they can tell you exactly. :cool1:
LMK of a place in WDW that offers either. I would like to try them.
I have been to the GF Afternoon Tea. But neither caught my eye on the menu if they offered them.

Devonshire is a specific brand of clotted cream.
At least that's the brand of clotted cream my local Whole Foods store carries.

Ah, I see. Maybe I'll start with a search at the British board. We have Devonshire cream at our Sweet Bay. I'm very curious but it's so expensive that I'd hate to buy it, try it, and then have to toss it out if I don't care for it. Thanks.

You are on the mark. It is very good and best on scones.

Found this on the Joy of Cooking:

"Devonshire (or Devon) Cream is a clotted cream produced commercially in Devon, Cornwall, and Somerset England. It is a thick, rich, yellowish cream with a scalded or cooked flavor that is made by heating unpasteurized milk until a thick layer of cream sits on top. The milk is then cooled and the layer of cream is skimmed off. Clotted cream has 55-60 percent fat content and is so thick it does not need whipping."

They have lots of recipes and some have mascarpone in them...

So good, but yikes on the fat content.. We are on vacation when we have this so.. no calories.

OMG! It sounds so good. Now I'll have to try a jar, but not until we take our July vacation. I can't be trusted with something like that around the house.

:thumbsup2
