I am wanting to make Tonga Toast this weekend. I've looked on the internet and have found 2 different recipes. I'm not sure which one to use. One says stuff the bananas in the bread and then just cook it in oil, then coat it in cinnamon and sugar. The other recipe says to stuff bananas in the bread, then dip the bread in and egg, milk and vanilla mixture, then fry and coat in cinnamon sugar. Can someone tell me which one of these I should follow for the best results?
 
I think the recipe that calls for dipping the bread in egg and milk is the more authentic one. The other one would be more like a grilled banana sandwich than french toast!
 
I don't know which recipe is more accurate, but as a cook I can tell you, you will have a better texture with dipping the bread in egg, milk and vanilla. It will keep the bread moist and give it a good flavor. If you just fry it in oil it will soak up the oil and toast the bread more than the nice finish an egg mixture will give you.

I just made Tonga Toast for breakfast this week. It immediately takes me back to the Poly! Just as PP said, you stuff the bread with banana, dip it in the egg mix, fry in oil (lots of oil!) and then coat with cinnamon and sugar. Yum Yum!
 

Thanks everyone. I thought the same thing about the recipe that had the egg, milk, vanilla mixture sounding better. I thought it would give it a better flavor. I can't wait to try it this weekend.
 
I have another question. How important is it to use sourdough bread. I make homemade bread all the time, but its not sourdough. I wondered if I could just use that. Any ideas?

The texture might be different--the bread might soak up more or less of the egg/milk mixture--but it'll probably be delicious either way.
 
here is the recepie as it appears in the disney cook book

1 cup sugar
2teaspoons cinnamon
1 loaf sourdough bread
2 bananas pealed
1 quart canola oil for frying

1. mix the sugar and the cinnamon with a fork until thoroughly blended set aside
2. slice the bread into four 2 inch thick slices
3. cut each banana in half crosswise, then each piece lengthwise
4. placea bread slice flat on the counter and tear out just enough from the middle (do not tear all the way through) to stuff half a bananna into it; repeate with each slice of bread
5. in a large pot or a deep fryer heat oil to 350 degrees use a candy thermometer to make certain the oil does not get any hotter or it will burn
6. gently place one bread slice into the oil for 1 minute, or until light brown.
7. turn and fry for another minute on the other side
8. removce the bread from the pot and toss it in the sugar and cinnamonmixture
9. repeat for each piece

that is the official one as taken from the cooking with mickey and the disney chefs that i bought in october 2009, egg involved at all.

i have never tried to make it but let me know if it turns out if you use this one
 
I made it a few weeks ago and used the egg mixture. Sourdough is a heartier bread, than homemade. I think it holds up better.
