Question about using tickets

I am looking at booking a 3 or 4 day reservation at WDW and will move offsite for the rest of my trip. We normally get hoppers, but then I thought if I just got a 7 day ticket we could use the extra days to hop if we want to. It works out to be cheaper than the hopper and we only plan to go to WDW for 4 days. If we go to MK then decide to head over to HS can we use an additional ticket or is it one ticket per day?
Also, we will be checking in on a Friday but I want to go to MK on a Monday or Tuesday and we will check out Sunday. When it comes time to book reservations will it allow me to book 180 +7 or only 180+3 even though I have 7 day tickets?

If you want to hop, you will have to add the hopper for your tickets. You are purchasing DAYS, not park admissions so without a hopper it will be one park per day.

For reservations, if you are asking about dining reservations, at 180 days you will be able to book your arrival day + the length of your onsite reservation.

The dining reservations aren't tied to your tickets at all. In fact, at my 180 day mark, I had not purchased tickets yet. You have to think about the fact that not all Disney restaurants are at parks. So park tickets can't be a criteria for booking dining at 180 days. But I did have a Disney Resort reservation. The Disney Resort Guest perk of booking "180+10" means you can book dining for your Disney resort stay (up to the first 10 days), at the 180 day mark of the start of your Disney Resort stay. In your case, you are only staying 3 or 4 days at a Disney Resort. Based on what you booked, that is the number of days you can book with 180+10. For the dates after your Disney stay ends, you will only be able to book one day at a time at each day's 180 day mark.

Sorry, you can't use extra tickets to enter multiple parks in a single day. You have to purchase Park Hoppers. If you buy a 3-day ticket, the Park Hopper option is $50*. If you buy a 4-day ticket (up to a 10-day ticket), the Park Hopper is $64*.
