Question about using DDP for all people at the same meal and two credit meals.

If our family is going out to dinner, can we use DDP credits for some but not all of us, and pay out of pocket for one or two of us?

Also, if my husband and I go out for a two credit meal, are the credits put on your card by person...so are we not allowed to use credits that have been assigned to one of our kids?

If they are "Disney Adults" (10+) it won't matter. However, if they are still using child credits (3-9), then no, it's not possible.

Credits are not stored per person, but rather a pool of all available credits, for the room, for the stay. They're split up between adult and child (at least for TS), but not restricted as to how many of each each person can use (assuming they fall under the right age category).
 
If your kids are 3-9 their credits can be used to buy only children's meals, so you can't use them to purchase an adult meal. If the kids are 10 or older, any adult in the party can use those credits.
