Sorry, I'm sure this has been asked before, but I cannot find it.

I assume the +10 is only if you're staying for 10 or more days, right? So, if I have a booking at a WDW resort from 4/1/18 to 4/5/18, then 180 days from 4/1, I can book through 4/5, correct? We're then staying off site from 4/5 to 4/8. When can I book for 4/6? Will my 4/1 - 4/5 reservation allow me to book for the day after our stay, or do I wait until 180 days for that? I assume the latter, but just want to check. Many thanks!

The 180 + length of on site stay up to 10 days applies to your onsite reservation. Once you have moved off site, you will only be able to book one day at a time. You will have to wait until 180 days before 4/6 to book that day, 4/7 the next day and 4/8 the next day.
