Okay, you will all probably think I'm dumb for asking this, but I have never used evaporated milk before. I bought a can the other day and when I opened it, the color of it was sort of light brown. Is that normal? It looked gross, as I was expecting it to be white, like milk. I couldn't bring myself to use it and dumped it down the drain. So, exactly what color is evaporated milk?

I don't think it was good. It is somewhat darker than regular milk because the water is removed. More like a cream color (not dairy cream, but wall paint.)

From HYGIENIC STANDARD FOR EVAPORATED AND CONDENSED MILK

"ITEMS - Evaporated milk - Sweetened condensed milk
Color and luster - The color shall be evenly milky white or milky yellow and shall have a luster

Taste and smell - It shall have a milky taste and smell - It shall have a milky aroma and a fine sweet taste.

Texture - The consistency shall be fine and smooth, with the texture even and the viscosity moderate.

Any time I have used evaporated milk it has what I guess I would call a tan color to it.

Thanks for the responses. I believe my can was darker than what yall have described. Very, very unappetizing looking. I'm not sure if I will ever be able to try another can after that.
