Question about dining

So I'm preparing for my first real trip to Universal. I know Disney pretty well, but we wanted to try something different. We're not doing a split trip, just Universal.

We'll be staying at the Royal Pacific the weekend before Thanksgiving with three days in the parks (Sun, Mon & Tues).

Here's the thing. My son has fairly extensive food allergies, including all milk and egg products. When I called, they suggested I do the sit down restaurants instead of counter service. Do I need reservations of any kind to eat at the sit downs? I was trying to do this as a stress free trip and I thought Universal would be less regimented than Disney so I haven't done a lot of tour planning but now I'm getting nervous.

There are a few ways you can go about this. You can either not make reservations ahead of time but do it in the morning at the restaurant or through the hotel. You can make reservations ahead of time through www.opentable.com or you can stop at the kiosk in Citywalk. If you are the weekend before Thanksgiving, I would think there would be no issue and you don't have to make reservations at all. You might have to wait a bit though when you do decide to eat.
