Question about dining options

We have not sailed DCL since 2018, so maybe conditions have really changed a lot in that time, but I see many comments criticizing the quality of the dining options on the ships. Genuinely curious if the quality has declined that much. We were on the Dream and we thoroughly enjoyed our experiences at the rotational restaurants (AP, EG, RP). Cabana's was also delightful and it was of better quality than your standard buffet. Admittedly, this is not a high bar, but the variety, quality, service and cleanliness at Cabanas was always outstanding. We never tried Remy or Palo so I have no point of reference, but I'm seeing some comments that these seemed to have declined in quality as well. For those who have been sailing more consistently in recent years, what are your experiences? Not looking to stake out an opinion, just putting the query out there.
