Question about adding park days and FP+

I'll be down to ASMo for a few days starting the 19th. It's mostly a solo trip (traveling with a couple people from work) for a conference that's been cancelled. Originally I booked two park days on a four day stay but with the cancellation of the conference I'll have more time to hit the parks. Originally DW tried to add a couple days over the phone but the agent was very nice in telling us that it would cost $60 to change my reservations now and that I could just add the days at the concierge or guest relations without the fee when I got there. Of course that brings up the issue of pre-booking FPs. I already have them booked for Monday and Wednesday and MDE won't let me book any more because I only have two day passes right now. So... what is the likelihood of getting anything worth fastpassing for Tuesday and Thursday when I'm adding those days on Monday? BTW, I'd be looking at HS and AK for those days as I already have EPCOT and MK FPs booked for Monday and Wednesday.
