QS hours, particularly with evening EMH

Do QS places normally close when the park closes in late November and early December, especially during EMH evenings, or is it earlier?
In particular, for HS with Fairfax Fare and MK with Cosmic Ray's.
Also, do QS places that do breakfast, for example Fairfax Fare and Sunshine Seasons, start serving lunch at 11am?

We were there the first week in December last year and went to MK's EMH night and to MVMCP on another night. Not all of the CS were open, although Cosmic Ray's and Casey's Corner were among those that stayed open until the end. The weekly Times Guide will include the closing hours of the main CS restaurants.

Some CS places may scale back their offerings late at night. I recall someone mentioning that Sunshine Seasons doesn't have hot entrees after a certain time. I know Cosmic Ray's reduced its offerings during the MNSSHP and MVMCP parties, although I don't know if they do the same during EMH.

We went to Cosmic Rays last trip during evening EMH and all that was open was the burger station. I was really disappointed since I had planned to get the chicken/ribs. From now on, we go there for lunch or early dinner.

purple figment, I realise that it is not guaranteed, but I was mainly looking for answers based on experience.
WantToGoNow, thank you for the comment about Cosmic Ray's (it reminds me of Carribbean Beach where we were always too early or too late for most of the options to be available, but the smoothies as a QS drink made up for it).
As an example, on a night when Fantasmic is at 6:30pm and the park closes at 8pm for EMH would it be likely that you could get food at Fairfax Fare after Fantasmic!, and if not what QS options would be available.
