What is the reason for having seatins say at 8:00, 8:15 and 8:30. Is it so they can manage the line at the door easier, is it so that all food orders don't flood the galley at one time, or is it something else, just curious?

Close, the seating times are staggered per restaurant, on any evening,

restaurant #1 is 8:00
restaurant #2 is 8:15
restaurant #3 is 8:30.

More to alleiviate everyone trying to rush all at once to all the restaurants.

One of the main reasons they began staggering seating times is that it alleviates the crush of people in the Atrium. With all rotations starting at the same time you always had throngs of people trying to get their portraits done, meet the characters, enjoy the Captain's cocktail reception (on the Magic), etc. The staggered times alleviate that a bit, although it is still busy.

This is lot nicer this way, because even though we almost always get late seating, having 8:00 seating makes a big difference over 8:30 when you have preschoolers.

Its purpose also extends to disembarkation morning. It staggers the amount of people heading off the ship at any one time.
