Pumpkin Seeds


Roast them, but I can't eat the shells like some folk do - what a pain to shell each and every seed. :rotfl:
 
I made some pumpkin seed brittle with mine and it was awesome! The recipe is courtesy of Martha Stewart but I tweaked it to suit our tastes. First butter a rimmed baking sheet or just use a silpat. Melt 1/2 stick unsalted butter in a small pan over medium heat. Stir in 1/2 cup packed brown sugar and 1/4 cup honey. Bring to boil and cook without stirring until thermometer reaches 280 degrees. Then add 1 cup of pumpkin seeds that have already been dried and toasted in the oven until brown, 1/2 to 1 tsp. cayenne pepper and 1/2 tsp. salt(this is my addition and makes it good!!!!).Cook until temp reaches 300 degrees and then pour onto prepared baking sheet. Let cool and break into pieces. Yummmmmm!!!!! I doubled this recipe and it worked fine. I really do think the cayenne is what turns it from bleh to :banana: . I used the full tsp. and did not think it too spicy.
