PS questions--Advice needed

We have the MYW dining plan. Our plan is to go to the parks in the morning, come back to the resort (we are staying at Carribean Beach) and then go back out for dinner and the nighttime entertainment (Spectro, Fantasmic, Wishes, etc). We are going in late September. I am totally confused about what time to make my PS arrangements. I feel like if I make them for dinner then I will be rushing around trying to keep everyone to a schedule and that isn't a lot of fun. But if we do lunch, then we won't really have anything to look forward to in the evenings. I'm also concerned that if we get a late start in the mornings for whatever reason, that we will throw off the entire plan and not make it to the priority seatings. Any help or ideas?

The way I am trying to do it is, make my breakfast ps late, so I can get in a few attractions before breakfast, and make my dinner ps around 6-7, then you still have time to enjoy the parks, fireworks before they close. Out of a 10 day stay, I am only doing 6 sit down resturants, the rest is CS. :teeth:
