It is part of the package but you have to specifically ask for it. They then provide you with a form to fill out about what you want to try. They do limit the amount of stuff to taste but I remember taste testing about 7-9 apps, the salad, 3 entrees, and a dessert. They prepare full portions so we were super stuffed. Also, we weren't sure about some of the wine choices in the package bars so our coordinator arranged for some bottles to be opened for us to try.

Depends...we knew where we wanted to have the ceremony and reception, so they basically just took us to the Whitehall. We did want to take a peek at the Wedding Pavillion but knew it wasn't for us. So the site visit portion took under an hour. Then we sat down with the coordinator, florist, etc; I think that took about 2.5 hours. I have no idea how long the tasting took: my guess is about 3 hours but I was kind of tipsy (see above answer )
We just had our planning session. It went from 9:00 amd to 5:00 pm
From 9 - 12 we were with our planner / cake tasting
From 12 - 2:30 we were with our planner and floral designer
from 2:30 - 4:00 we had our food tasting
4:00 - 5:00 we went to look at the locations one last time.

Definitely go hungry to the tasting....they really stuff you! And don't be afraid to speak up about what you eat....we did and they were actively taking notes and such to get things right!
no you dont pay for anything so make sure you eat all of it!! I was worried about eating it as they look at you but dh just ate it all! we loved it and all our food was as good on our wedding as the planning session

We have Celeste too! Our planning session was 9 to 1030 with Celeste then Rose was about 1030 to 1130 then we relaxed from 1130 to 230 on the beach at Grand Floridian. We peeked in at the Wedding Pavilion, where we are having the ceremony. At 2:30 we met Celeste at the Convention Center to see the PreReception area and the Reception area and then headed to food tasting. I couldn't even finish eating at the tasting session, DEFINITELY go to the tasting hungry, because it is A LOT of food! Altogether the day was about 9 to 330pm

I'm not sure of the rules and I don't remember how many lines there were on the form (our PS was in May 08). We had a plated, sit down dinner at the Grand Floridian and for that we tried 1 app, 1 salad, 3 entrees, and 1 dessert as we had a fairly good idea of what we wanted. Pre-dinner, though, we had a 1.5 hr long cocktail/hors d'oeuvres thing and we planned on doing the cheese display + 5 hors d'oeuvres; I think we tasted 7-9 hors d'oeuvres and chose our final 5. We also tasted several of the wine choices on the "full signature bar package" because we wanted to have good wine.
I would ask your planner if you can taste more that the number of lines. The worst thing is that they'll say "no."
