Last year my family and I went November 25th-28th last year for the exact reason...not to miss school...
yet surprisingly WE LOVED IT!!! every moment of the trip!
Pro's:
1.)Parks open late
2.)you could get tix for Mickey's Very Merry Christmas Party and get FREE HOT CHOCOLATE!! & get to ride the rides with almost NO LINES all night long!
3.)It is not as hot as it usually is in Florida i.e. temeratures dropped down into the high 50's at night so no worries for any crazy sunburns or heat exhaustion

(bring a hoodie!)
4.) If you were to fly down on thanksgiving day, you will see that airfares are incredibly low! We flew on Trans Meridian Airlines DIRECT flight into orlando-sanford...the food was splendid and the flight attendants were all smiles
Con's:
1.)It was VERY difficult to find ANY Turkey on the WDW premises, they only had it at the resort and you needed a reservation...luckily we got in at our resort and for $20($10 for 12-under) we had quite the Disney Thanksgiving Dinner
2.)Crowds...yes there is quite a bit extra people in the parks the days leading up to thanksgiving, BUT on turkey day and the days following there was an obvious decline in the amount of people at WDW i.e. watching the rush of people check out of there hotel rooms as we awoke the day after thanksgiving...LINES FOR TAXIS instead of rides
