Priority Seating Necessary?

My wife and I are heading to Disney this Saturday. We tend to be very spontaneous with our dining plans. We never know where we are going nor what time we want to go until the last second. We haven't thought about where we are going to eat in the theme parks for even one second. I was wondering if priority seating is really necessary, or if we just try to walk in to a place will there be a long wait almost always? We tend to eat in the off-hours: 3pm for lunch, 8pm for dinner, so I was thinking it might not be a big deal.
 
If it's just the two of you, you shouldn't have a problem as long as you're not trying for super popular restaurants. My fiance and I are always making last minute plans since we live here: tonight we're going to the San Angel Inn for my favorite Mexican dish they only have in September (chiles en nogada), and last night we were able to get a 7:15pm for tonight.

Walkups may be a little harder, and it doesn't hurt to try to call even just a few hours beforehand.
 
It may be harder than what you think - if I remember right 2 things starting this weekend - Wine festival at EPCOT and Mickey's halloween party - I have read on the boards that a lot of people plan to be there this weekend through the next week. I read somewhere that ressie were pretty hard to get for the next several weeks - I hope you don't have any problems. We were there a couple weeks ago - I had made all of my ressies and ended up changing quite a few after we arrived. It was very hard for me to make all of them in the beginning because we like to go with the flow too.

We will be there next week and most places are booked solid! I tried to change some ADR's and could not because there was NOTHING available.
 

Ditto what Jen said. I tried to get a few things switched and it was a no go. Places are booked solid. Good luck, but if all else fails there are alwasy the F&WF booths.
 
I tried to change around some of my ressies for next week and no avail. Everything is BOOKED solid.
 
You won't have any trouble with CS, but LOTS of trouble with TS. Most places, popular or not are booked right now. We leave in 5 days and the resorts are all full!
 
The big difference, though, can be party size. Do most of you who have trouble have kids/larger parties? We're just a party of two and tend to have a lot less trouble getting a seat than parties of three or more.

that is not necessarily true. Most of the popular choices are booked, for dinner. I called this afternoon and could have booked: CRT for lunch on Saturday, several choices for lunch at Le Cellier, Garden Grill, Whispering Canyon, and dinner at Sci-Fi, on different days and times. If you have some flexibility, you might be ok.

Having said that, I couldn't get anything at Chef Mickey's, most places for dinner, Liberty Tree Tavern (the character meal), or CRT for breakfast.

I plan on making a few final tweaks to our Priority Seatings for next week, and cancelling the ones I don't need tomorrow (before we leave)
