Remember that salt causes water retention, and vacation food is very salty. Almost all of it. Much more so than at home, where you have at least some healthy meals. If she already has swelling, this is something to seriously avoid, because as it is, she will be dealing with heat and humidity, tiredness, lots of walking, and a long journey. Additionally, flying can make swelling worse due to pressure changes.
Stretching her body out entirely with legs elevated will help promote fluid returning "up" from the lower extremities, as opposed to sitting and just putting legs up, which still compresses those blood vessels. [The pressure from the baby and sitting sort of "kink the garden hose" if you will. Stretching out "opens it up".] Allow lots of time for relaxing in your room.
As for resting spots around the World, I like the porch at City Hall in the MK. Just get there well ahead of parade time, and go to the bathroom and get snacks before you sit down. At Epcot I would find somewhere shady tucked away in the back of one of the countries - Japan is tranquil. AK has lots of shady spots, as do the resorts (if you're not at your own). At HS there is that cute little book store (Writer's Stop) where she could enjoy a cup of herbal tea, or the shade of the ABC Commissary.
