We're leaving next friday and staying at Fort Wilderness in our camper. Our meals will consist of breakfast (except for 2 character breakfasts) in the camper, counter service for lunch and dinner back at the campground. I'm bringing my crockpot so the bulk of the meal will be done when we get back to camp!
Our first night will be boneless, skinless chicken breasts with a bottle of BBQ sauce dumped on top and cooked in the crock. My kids (4 & 5) just love their chicken this way! I'm making rice ahead and freezing it before we go, so I'll just warm that up and then have a salad. You could also bring instant rice. I'll make enough of this for 2 nights. Another night will be a pot roast in the crock and I'll get left overs from that too. I usually add a can of cream of mushroom soup and a package of dried onion soup mix. I'll also add carrots and potatoes. They travel well! (Oh, all my meat will be frozen when we leave). I'll premake some noodles that I'll freeze at home and warm up at Disney. Remember, if you do this, under cook the noodles just a little or they may be mushy when reheatd. I'm freezing spaghetti noodles ahead, bringing a jar of sauce and some frozen meatballs and some crusty bread and butter. I'm thinking I'll throw the sauce and meatballs into the crock to cook, then warm up the noodles. I could thaw out the noodles and add that to the crock with the sauce and meatballs, but I'd have to add more sauce 'cause the noodles soak up alot of the sauce while warming up. I should mention that a friend gave us a little microwave to keep in our camper and that's how I plan to heat up the side dishes.
Breakfast will simply be cereal, fruit and/or breakfast bars. I'll have a toaster for toast and poptarts. I hope this gives you some ideas?????
