precooking and freezing suggestions

Our meal plan is a mix of expensive character meals and cooking/picnics. We're driving to WDW, and I'm planning to cook and freeze some food. Some days at WDW I'm packing picnic lunches to eat while we park hop or while my kids do the Pirate Cruise and Wonderland Tea Party. I'd love ideas for meals to freeze. I've thought of sloppy joes, spaghetti, and taco meat. I don't want to spend my vacation cooking, but we need variety so eating in isn't a deprivation.
 
Where are you staying?

We did this when we stayed at the DI. We had a full kitchen and I brought frozen spag & meatballs on the plane. We also made tacos. Stew is another possibility. Or how about freezing lunch meat and buying bread? Lasagna?
 
We have 1 nt at CR then are heading to a nearby timeshare where we have a full kitchen. I'm going to pack light as far as clothes since we have w/d. I hope to stop at a grocery store briefly for milk, bread or anything that wouldn't travel well, but I hope to keep that list to a minimum. I also like to cook ahead and freeze at home to save time and money. I have fibromyalgia and often need something fast to serve, so freezing helps me avoid pizza delivery. We're definitely taking frozen deli meats and cheese for picnics. I just thought I'd see if anyone had ideas I hadn't thought of.
 
We also use leftover meatballs for meatball grinders....or how 'bout baked macaroni and cheese or pre-cooked chicken tenders (so you can basically heat and serve....) or you can use those chicken patties (like tenders) to make a super quick and easy chicken parmagania (ok, I'm sure I spelled that wrong, but you know what I mean)...not a *freezer* item, but eggs can really make a great meal - quick and not too messy (usually, unless I have *help* with the cracking :rolleyes: ) add some sliced fruit and have breakfast for supper!

One of my closest friends also has fibro...so I know where you are coming from. Some days it's all she can do to make her kids a grilled cheese! Have a great vacation!
 

We're leaving next friday and staying at Fort Wilderness in our camper. Our meals will consist of breakfast (except for 2 character breakfasts) in the camper, counter service for lunch and dinner back at the campground. I'm bringing my crockpot so the bulk of the meal will be done when we get back to camp!
Our first night will be boneless, skinless chicken breasts with a bottle of BBQ sauce dumped on top and cooked in the crock. My kids (4 & 5) just love their chicken this way! I'm making rice ahead and freezing it before we go, so I'll just warm that up and then have a salad. You could also bring instant rice. I'll make enough of this for 2 nights. Another night will be a pot roast in the crock and I'll get left overs from that too. I usually add a can of cream of mushroom soup and a package of dried onion soup mix. I'll also add carrots and potatoes. They travel well! (Oh, all my meat will be frozen when we leave). I'll premake some noodles that I'll freeze at home and warm up at Disney. Remember, if you do this, under cook the noodles just a little or they may be mushy when reheatd. I'm freezing spaghetti noodles ahead, bringing a jar of sauce and some frozen meatballs and some crusty bread and butter. I'm thinking I'll throw the sauce and meatballs into the crock to cook, then warm up the noodles. I could thaw out the noodles and add that to the crock with the sauce and meatballs, but I'd have to add more sauce 'cause the noodles soak up alot of the sauce while warming up. I should mention that a friend gave us a little microwave to keep in our camper and that's how I plan to heat up the side dishes.
Breakfast will simply be cereal, fruit and/or breakfast bars. I'll have a toaster for toast and poptarts. I hope this gives you some ideas?????
 
Hey, thanks for the input. I didn't know that about undercooking the pasta slightly. I went from being a restaurant manager to being married to a chef, so suffice it to say I didn't do much cooking. I've since divorced the chef and upgraded to a more user friendly model, but now I'm the culinary specialist in the home. I'm always looking for creative ways to avoid real cooking. I mean, I'm always looking for creative additions to our menu. ;)
 
We really like the microwave Pasta Any Time meals they are shelve stable so don't need freezing or refigerated,I have tryed the Mac & Cheese[this so fabulously yummy!!], And Fetticine,also very good,and Spegetti and meatball,Dh reports this one is spicy. At the Grocery Outlet today they were $1.79 each.

Sure beats a $30. meal at the Food Court!!
 
This inspires me. We will have only a micro so cooking spaghetti is out, but sloppy joes should be great.
