power cooking weekend 4!

going to power cook again today in the hopes of little or none this weekend thru at least tuesday!

so far (by 9 am our time) a huge taco salad is done along with several of the dishes for "munster nachos" (seasoned meat, shredded cheese, guac, sour cream, salsa, toms, onions, ortegas, refried beans, olives....). yet to be done-tortellini, garlic bread & italian sausage!

so much easier to do this on a friday or saturday a.m.-then i can kick back for the weekend and not have to worry about dinners let alone bag lunches for the first few days of the week!
 
I think I am going to wait until sunday to do my power cooking this week. I am not sure what everyone is doing next week, so I am not sure how much I need to cook!
 
This is a great cookbook, more on "pre-assembly" of meals, as opposed to cooking first and then freezing!

We've already tried the honey glazed chicken, margarita pork chops, tequila lime chicken. In the freezer are basil crusted pork roast, sweet asian chicken and pecan coated chicken fingers, and the chicken stir fry with cashews.

Havent' been disappointed with any of them yet!
 

My aunt gave me this cookbook called Cook Once, Eat for a Week - or something like that. It is a great concept...because that is how I live! I am glad to see that there are others like me out there...the only problem with the cookbook? it is for a family and I live alone...I cooked once, it would probably last me a month ;)
