Pound of Ground Beef Meals?

After the beef is ground I add a squeeze bottle of pizza sauce, chopped green peppers & onions, mushrooms, sometimes a bit of garlic. Before serving I stir in a small amount of shredded cheese. I serve over corn bread topped with shredded cheese.
 
Another way to save money with this idea is to switch to ground turkey. We switched about 1 1/2 years ago and my family can not tell. Actually the flavor of the meat is not as strong so the food taste better. Ground turkey is about $1 cheaper per pound here, so big savings over the month and much better for your family.
 
Cincinnati Chili

1 large onion chopped
1 pound extra-lean ground beef
1 clove garlic, minced
1 tablespoon chili powder
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon red (cayenne) pepper
1/2 teaspoon salt
1 1/2 tablespoons unsweetened cocoa or 1/2 ounce grated unsweetened chocolate
1 (15-ounce) can tomato sauce
1 tablespoon Worcestershire sauce
1 tablespoon cider vinegar
1/2 cup water
1 (16-ounce) package uncooked dried spaghetti pasta
Toppings (see below)

In a large frying pan over medium-high heat, saute onion, ground beef, garlic, and chili powder until ground beef is slightly cooked. Add allspice, cinnamon, cumin, cayenne pepper, salt, unsweetened cocoa or chocolate, tomato sauce, Worcestershire sauce, cider vinegar, and water. Reduce heat to low and simmer, uncovered, 1 1/2 hours. Remove from heat.

Cook spaghetti according to package directions and transfer onto individual serving plates (small oval plates are traditional).

Ladle chili over spaghetti and serve with toppings of your choice. Oyster crackers are served in a separate container on the side.

Toppings:
Oyster Crackers
Shredded Cheddar Cheese
Chopped Onion
Kidney Beans (16-ounce) can

Makes 6 to 8 servings.

I made this tonight because I had everything on hand and it sounded interesting. I really liked it - it was so different, but the family said once was enough and it was just ok. The good part is more leftovers for me! I liked it and trying something new was fun for me. Thanks!
 
Hamburger Soup

Was my :confused3 FAST way to invent a fast dish to feed 5!!

I first browned the hamburger in a deep pan with itailan spice.
it need to hold 4 or 5 quarts.
after the hamburger is brown to the most done I want where there no pink,
dump an open can of corn and the water
I put in baby carrots,
a can of small potato cut quarter as well as you can in the potato can, dump potatoes and water in with hamburger
dump an open can of green been and the water
squirt in 1/2 cup ketchup or small tomato sauce you will the tomato sauce. But not the kechup.

You want this somewhere between a soap and stew! It can be served crackers, bread and butter or salad!!

If your family doesn't like anything in the Soup just change it to what they do love.

This is an ever changing recipe even in my home!!!!:wizard:
 

Easy shepards pie Not traditional but tasty!

1 pound ground beef browned
Small onion sauted until tender
1 small can mushroom (or fresh cooked) (not necessary but we like it)
1 jar of beef gravy
Frozen peas and carrots (small bag)
Mashed potatoes (about 3-4 cups) Instant or fresh
Cheese slices (or whatever you have)

Mix together ground beef, onions, mushrooms and gravy and put in a 9" round pie plate or cake pan. Top with frozen peas and carrots, enough to cover ground beef mixture. Top all of that with the mashed potatoes. Place in oven at 300-350 for about 25 minutes (all you really are doing is heating everything through) Once it is heated place cheese on top an let melt.

This recipe freezes great, just don't put the cheese on before freezing.
 
Tater Tot Casserole

French fried onions
tater tots
2 cans cream of mushroom soup, mixed with about a half a cup of milk
shredded cheese

Layer the ground been, then the green beans in a casserole dish. Sprinkle enough french friend onions to your liking, then layer with enough tater tots to cover. Pour on the soup mixture. Bake at 375 for 20 minutes or until bubbly. Add shredded cheese and bake until cheese is melted.
 
Ok, I hope this catches on because it is the simplest meal that we ever make. My sister-in-law Debbie made it up and it is very tasty. She browns a pound of ground beef and then makes a package of that Lipton Spanish Rice. Mixes them together and for some reason it really does have a great taste. She did not tell anyone what or how easy it was when she brought it to a get-together and we ended up all asking her to tell us her recipe. It was hilarious when we found out how easy it was.
 
I am NOT a meatloaf person, but my sister makes 2 versions that I really like:

1. BBQ Meatloaf... pretty much make a meatloaf w/ the BBQ seasons instead of italian seasons. Form into loaf, lay slices of bacon around it, brush with bbq sause and bake.

2. Spinach Meatloaf (LOVE LOVE This one!) Beef, lipton soup mix, various seasons breadcrumbs/eggs. Mix and spread into an approx 1 inch rectangle ontop a piece of parchment paper. set aside. Mix Cream Cheese, drained/thawed frozen spinach or shopped fresh spinach, fresh garlic spread in the middle of the meat mixture. Use parchment paper to bring sides of the rectangle up and cover the cream cheese mixture. Pat meat closed around the cheese mixture. Put in pan to bake.. we cover with freshmushrooms. Bake not only is it super yummy, it also looks nice on the plate.

Easy Enchiladas

Brown 1lb hamburger and drain
Mix in one can of refried beans and one can of enchilada sauce
Add a handful of shredded cheese - I use the mexican blend

Put one large scoop of mix on a burrito size tortilla and roll up. Place rolled tortilla with the rolled side down in a greased 9 x 13 pan. I can get six enchiladas in that size pan. Pour a second can of enchilada sauce over the top of the tortillas and cover with shredded cheese. Cover with tin foil and bake at 350 degrees for 25 minutes. Uncover and bake for 10 more minutes.

Very easy and one of my family's favorites.

This recipe will fill eight tortillas - I then put four each in two 7 x 11 pans.

You can make a quick and easy lasagna using ravioli. Par cook first, then layer with sauce, browned ground beef, whatever veggies you like (or your kids will eat).

Frozen ravioli can be expensive, but it goes on sale fairly frequently at my local grocery store. I stock up!

My mom used to make this and I make it now. My DD and DH both like it. I use the Rice a Roni Whole Grains Spanish rice, add a pound of ground beef that has been crumbled and also add about 1 to 1 1/2 cups of frozen corn almost at the end of the cooking time for the rice (while still a little liquid left). I've also been know to add some additional seasoning to spice it up a little. Easy to make, cheap to make and heats up well if there end up being any left overs. :thumbsup2
 
This was the original recipe, but I change some things. I add two cans of tomatoes and about 3/4 of a can of light coconut milk.

Ground Beef "N" Curry
Recipe by : Minneapolis Star Tribune

Ingredients :
1 clove garlic
2-3 tsp. curry powder
3/4 cup chopped onion
1/8 tsp. pepper
1 1/2 Tab. butter or margarine
1 lb. ground beef or turkey
1 tsp. salt
2 juicy tomatoes, diced or
1-14oz can stewed tomatoes
2 cups cooked rice
Assorted condiments

Instructions :
Sauté garlic, and onion in butter , then add ground beef. Brown until red disappears. Add seasonings and tomatoes (break up if canned tomatoes are used). Heat thoroughly. Serve over rice with condiments.

Serves 4-6.

This is a quick and easy dinner that has become one of our favorites.

1 sliced banana
1/2 cup plumped raisins
1/2 cup chopped nuts
3/4 cup shredded coconut
1/2 cup mango chutney--if available

Fill separate bowls with condiments and place on the table with small spoons

1 1/4 pounds lean 90 percent ground round
2 teaspoons salt, or to taste
2 (8-ounce) packages crescent roll tubes
2 (4-ounce) cans whole green chiles
1 (8-ounce) pack shredded mild cheddar cheese
1/2 medium onion, chopped
1 pint light sour cream
1 bunch scallions (about 8), diced
Black olives, chopped


Directions
Preheat oven to 375 degrees. Heat skillet on high temperature. Add ground
round, salt to taste and brown for approximately 9 minutes. Roll out first package of crescent rolls onto a baking sheet. Separate into 4 individual squares. Do not separate into triangles. Lay one chile on each of the
four crescent roll squares. Place 3 ounces cooked ground round on top of each of the 4 chiles. Sprinkle 1-ounce of cheddar cheese and chopped onion over the ground round on each of the 4 wraps. Open the second pack
of crescent rolls and place the same square piece over each of the wraps. Top each wrap with another ounce of cheese. Place the wraps in the pre-heated oven. Bake for 13 minutes. Dollop sour cream on each wrap. Top
with diced scallions and black olives.
 
Cheesy Enchilada Casserole

1 pound ground beef
1 clove garlic, minced
15 ounces tomato sauce
1 teaspoon ground cumin
12 corn tortillas
lettuce, shredded
fresh tomato, chopped
1 med. bell pepper, chopped
16 ounces pinto beans, drained
1 cup picante sauce, med. hot

Directions:
* Cheese may be Monterey Jack or Cheddar

Brown meat with pepper, onion and garlic; drain. Add beans, tomato sauce, picante sauce, cumin and salt. Simmer 15 minutes. Spoon small amount of meat mixture in 13x9 baking dish. Top with 6 tortillas. Top with half the remaining meat mixture; sprinkle with cheese, repeat (except for cheese). Cover tightly with aluminum foil. Bake at 350" for 20 minutes. Remove foil and top with remaining cheese. Bake uncovered for 5 minutes. Top with lettuce, tomato, sour cream and additional picante sauce.
 
I made the Tex-Mex Beef Enchilada casserole from the Martha Stewart website. It uses ground beef. It was really good and easy to do on soccer night. You may want to double the recipe if you have growing appetites in your house or if you want leftovers for lunches the next day.

Serves 4

Ingredients:

2 tablespoons olive oil
1/4 cup all-purpose flour (spooned and leveled)
1 can (14 1/2 ounces) reduced sodium chicken broth
1 1/2 tablespoons chili powder
1 small chipotle chile in adobo, minced, plus 1 tablespoon sauce (from a small can)
1 small onion, finely chopped
2 garlic cloves, minced
3/4 pound lean ground beef
Coarse salt and ground pepper
8 corn tortillas (6-inch)
1 1/2 cups shredded cheddar cheese (6 ounces)
1/4 cup chopped cilantro

Directions:

1. Make sauce: In a medium saucepan, heat 1 1/2 tablespoons oil over medium. Add flour and cook, whisking occasionally, 1 minute. Add broth, chili powder, chipotle and adobo sauce, and 3/4 cup water; bring to a boil, whisking constantly. Reduce heat, and simmer until lightly thickened, about 10 minutes.

2. Make filling: In a 10-inch nonstick skillet, heat remaining 1/2 tablespoon oil over medium-high. Add onion, garlic, and beef; season with salt and pepper. Cook, stirring, until cooked through, about 8 minutes.

3. Preheat oven to 350 degrees. (If freezing, don't place any sauce in baking dish.) Spoon 1/4 cup sauce in bottom of an 8-inch square baking dish. Set aside. Make enchiladas: Stack tortillas; wrap in foil, and warm in oven, 10 minutes. Fill each with a heaping 1/4 cup beef mixture and 2 tablespoons cheese; tightly roll up.

4. Raise oven heat to 450 degrees. Arrange enchiladas, seam side down, in baking dish. Top with remaining sauce; sprinkle with cheese. Bake, uncovered, until hot and bubbly, 15 to 20 minutes. Let cool 10 minutes before serving. Serve garnished with cilantro and, if desired, a green salad.

To freeze: make sauce and enchiladas; arrange enchiladas in baking dish without sauce (so tortillas don't become soggy). Place sauce in an airtight container. Cover dish with plastic wrap and foil. Label, date, and freeze enchiladas and sauce. Use within 2 months; bake without thawing.

To bake from frozen: Thaw sauce in refrigerator overnight. Preheat oven to 450 degrees. Remove foil and plastic wrap from baking dish. Pour sauce over top, and sprinkle with cheese; cover with foil. Bake 30 minutes. Uncover; bake until lightly browned and bubbly, about 15 minutes. Let cool 10 minutes; serve.

If baking right away: Spoon 1/4 cup sauce in the bottom of baking dish; pour the rest over the enchiladas
 
My parents did a Mushroom Goulash when I was younger.

a pound of pasta
a pound of meat
1-2 Can of Cream of Mushroom
salt and pepper

Their version:

Begin to boil the pasta
Med Heat Brown the meat
Drain most of it
Open a 1 1/2 cans of CoM
Add one can of water stir.
Turn down to a simmer.
You can always add more water/CoM to get the to desired thickness of the cream
Drain the water and then add the pasta.

This is how my mom made it. Now to add flavor to a pretty boring dish.. lol its sometimes is:

For color you can add parsley, basil, really just about anything. My kid LOVES it. I have added real mushrooms and I have thought about a vegi like peas. We tried broccoli, but that didn't go over well.
