Does anyone have any main dish ideas for a potluck where we won't have time to cook? We have a game and then a potluck banquet 15 minutes after. :confused3

If I can't come up with anything to serve cold, I will have to go the crockpot route, but I hate to do that because it HAS to be done when I come home to grab it.

I would love to hear suggestions!!!

TIA.

I make wonderful shredded beef..It takes no work at all..I simply put a pot roast in the crock pot the night before..Pour out some of the water in the AM and pour in a jar of Salsa....When you get home a quick go at it with a fork and it will fall apart... I Just bring along a pack of flour tortillas and cheese for people to top it with

Maybe 7 layer dip?

16 oz. can refried beans
1 C grated cheddar or Monterey Jack cheese
1/3 C black ripe olives, sliced, pitted, and drained
1 large tomato, chopped
1 C sour cream
1 C guacamole
1 C salsa

tortilla chips

Serves 8

Using a 10-inch glass pie plate or baking dish, spread the refried beans over the bottom of the dish. Now make a layer for the cheese, followed by the olives, then the tomato, then sour cream, guacamole, and top with salsa. Cover and chill for at least 30 minutes before serving.

How about a veggie pizza? I just made this for a party and everyone seemed to like it.

2 pkgs crescent rolls
Bake according to directions on a cookie sheet with dough spread out.

Mix 8 oz. cream cheese
1 cup mayonaise
1 pkg. Hidden Valley Ranch mix

Pour over cooled crescent roll dough then dice/shred the following to top:
Broccoli, green pepper, tomatoes, black olives, red onion, carrots.
Top with cheddar cheese.

Ok. I'll post my grandma's junk salad recipe. You can use this as a main dish if you want (we do sometimes!). My family loves this and throws a tiz if I don't bring it to each pot luck we have.

Mam's Junk Salad.

Small shell macaroni- cooked and drained.
Miracle whip salad dressing
chopped onion (I used green onions or sweet onions).
chopped carrots.
chopped celery.
Cubed Ham.
chopped hard boiled eggs.
chopped dill pickles.
chopped tomatoes (add these just prior to serving or it will become too watery).
Shredded cheddar cheese.
I also add frozen peas sometimes. Sometimes I add chopped up califlower and broccoli. You can really add whatever else your family likes (that's why it is called junk salad).

Use enough Miracle whip to make it moist. Yummm. think I'll make some tonight.

Thank you for the ideas everyone.... I was stuck in a rut trying to bring something my family will eat - which is basically meat and a lot of it! :goodvibes

A lot of your ideas would be a great hit with a lot of people, and I would get to eat something out of the ordinary!!!

Thanks again!
