Potluck dish?

So we are going to a wedding on New Years day but since the couple doesn't have a lot of money they have requested that each family bring a covered dish... I thought this was very weird...but he is my brothers best friend from middle school...so what is an easy covered dish (hot or cold) ...TIA
 
Sounds like it could be a fun wedding. ::yes::

A salad of mixed lettuces and anything else you wish to add is usually quite welcome and pretty easy. You can either bring a basic vinaigrette, or a selection of dressings (I'd go with one oil and vinegar based).

Sliced ham or turkey is another good option. Needs to be kept refrigerated though.

Depends upon how much you want to spend, the effort you want to put forth and how many people you expect to feed with your offering.
 
How casual is it?

I think it will be easier to keep something cold and fresh rather than hot unless you take a crockpot.

I vote for sandwiches of some type.

A tray of finger sandwiches... get small buns (smaller than hamburger buns) and add ham and cheese, chicken salad, etc. Keep in a cooler until ready to serve.

If you can go the crockpot route, team up with someone... One can bring a hot sandwich filling like sloppy joes, BBQ, etc and the other can bring all the buns.
 
Seeing as you have an 8 year old and not knowing what others are bringing, I would go with something that falls into the "a main dish option" that you know she will eat. That is if she is going to be attending with you.

Nothing would be worse for a hungry kid who has limited options to eat.
 

We are having a pot luck at work today and I brought couscous with peppers, cucumber, mint, and basil. It is quick, simple, healthy, and can be served either hot or cold. It is my go to dish for potluck lunches.
