I need a wow recipe for this brunch. The only problem is that it needs to either be served cold or it has to be able to sit out for awhile. I drive a school bus so I leave my house at 6. The potluck is for a fellow driver who is having a baby. We will be eating around 9 when we all get back in after the morning run. I will not be able to go home first so it will either si out or be put in the fridge. We have no oven but do have a microwave.

Any help would be greatly appreciated. Thanks.
 
I have always had big success with Paula Deen's Santa Fe Wraps.

They are like those tortilla swirls but with a mexican-y filling. I have had lots of people love them and request the recipe. They are served cold and I usually put extra salsa for dipping.

Other ideas:
- You could make a fruit 'salsa' and serve with cinnamon chips. Dice fruit, (fresh or frozen or a combo of both), toss with a little bit of jam. Bake tortillas cut into wedges sprayed with nonstick spray, coated with cinnamon sugar for the chips.

- Make a big pan of cinnamon rolls as they would not require refrigeration or some other baked goodie.

Edit: Just thought also you could make a quiche. That can be served cool/room temperature.

Can you have a continental breakfast with bagels, danish, crumb cake, fruit salad, etc? If you bring bagels you could have lots of cream cheese flavors, lox, etc. too.
