Potato Salad

Some great sounding recipes! Love a good potato salad. This is the one I make all the time and have been asked for the recipe often.

Boiled Red Potatoes skin on in quarters long way. Slice red onion thin and add to potatoes.

In a bowl whisk mayo, cider vinegar, dijon mustard, celery seed, fresh parsley, salt and pepper. The combo is great tasting!
 
Red potatoes - boiled whole. Cool slightly, skin, and cut into cubes. Toss with Italian dressing while still warm and refridgerate overnight.

The next morning, toss with mayo, salt, pepper, 1t mustard, and 4 or 5 chopped hard-boiled eggs.
 
Between food allergies and picky eaters, I have to make THREE different bowls when I make potato salad. :sad2: My favorite is my daughter's bowl, the "egg allergy" bowl. I use sour cream, celery, black olives, green onions, and crumbled bacon. It's lovely. :)
 

I dont make it, but just for the record I like Macaroni salad better

Best Foods Mayo is Hellman's Mayo, I believe. They are just labeled differently in different parts of the country.

Purple Apple Slaw

Ingredients


1/2 medium head red cabbage, finely shredded
1/4 cup finely minced white onion
2 Fuji apples, peeled, cored and finely diced

1 cup mayonnaise
1/2 teaspoon salt
1/8 teaspoon pepper
2 teaspoons sugar
2 tablespoons lemon juice
2 tablespoons milk

Directions

In a large serving bowl, toss together the cabbage, onion, and apples. In a small bowl, whisk together the mayonnaise, salt, pepper, sugar, lemon juice, and milk. Pour dressing over the cabbage mixture, and toss to coat. Chill until serving.
 
Potato Salad is usually the thing I am asked to bring at family BBQ's

5 lbs of red potatos
5-6 boiled eggs
Mayo
Miracle Whip
Sweet relish
dill relish
juice from sweet pickles (if anyone has homemade, the juice from these are best)
a squeeze of mustard (I like squeeze it around the bowl)

I don't really measure anything, but taste as I go and add salt and pepper at the end. Really good. The Mayo and MW are done at 2/3 of what I used to put of just mayo is the mayo, 1/3 of it is MW. Clear as mud, but only way I can really explain it.

Mayonnaise
Salt
Pepper


This is pretty much mine. I use the baby red skin potatoes so I don't have to peel them. My store calls them creamers. I just cut them in half once they are boiled. The only thing I do is add onions sometimes..and maybe celery if I feel like it. It's simple but it is the salad everyone loves to eat in my family.
 
I make a very standard, PLAIN potato salad and people always come up to me during a party and seem in awe of it. I think so many people try to "trick out" their potato salad that it ruins the simplicity of it.

This makes enough for a pot luck so reduce if you are just making it at home:

5 lb bag of red potatoes or Yukon Gold (do not use Russett)
5 hard boiled eggs
1.25 cups Hellman's Mayonnaise or other brand (do not use Miracle Whip)
2 Tbsp. Yellow Mustard
6 bread and butter pickle slices, chopped up
1/4 cup of the juice from the bread and butter pickle jar (shake to get some of the spices into the juice)
1 medium yellow or white onion, chopped finely
Salt and Pepper

Boil pototoes until cooked. You can do this anyway you like. My grandmother SWORE that they retained better flavor if the skins were left on and they were boiled in large chunks. I don't always have the time for that so I cut them in fourths and peel them first. Add about 1 Tbsp of salt the cooking water as potatoes love salt and this will give them more flavor.

Meanwhile, in a large measuring glass or small bowl, mix the mayo, mustard, and pickle juice to make your dressing.

After potatoes cook and cool a bit so you can handle them, cut them into bite sized pieces. I like my pieces a little large so I do not have some "mash" of a salad but it is your own preference. I also don't like the potatoes uniformly cubed but a variation of sizes.

Add potatoes to the bowl along with the chopped onion and salt and pepper to taste. Lightly toss.

Pour dressing over potatoes and mix well. After doing so, chop eggs and gently mix in. If you like, you can slice some of the eggs and add them as garnish on top.

I LOVE potato salad with mustard in it. Think I'll make some today!

Instead of cutting up the b&b pickles, I use relish and I cube red apples (with the skin), about 2 hard-boiled eggs (finely chopped) and add about a teaspoon of cider vinegar.
 
This is my ex mother-in-laws recipe. I still use it.

1/2 cup sugar
1 tsp. salt
1Tbsp. flour
2 tsps. dry mustard
1/4 tsp. pepper
1/2 cup viniger
1/2 cup water
2 eggs beaten

Mix dry ingredients. Add vinegar & water. Cook over low/med heat until it starts to thicken. Stir often.

Pour over beaten eggs and cook until thick. After cooling, add 1/2 cup miracle whip and 1/2 cup mayo. Mix & pour over chopped potatoes, boiled eggs and onions.

I usually end up doubling this and using almost five lbs of potatoes and about 10 eggs. I'm making some, by request, for a graduation party next weekend.
 
I make my potato salad with a recipe that a German delicatessan (sp?) in town used to make. Sadly they retired and closed up shop - but passed on their recipe to their beloved customers!

I boil my potatoes (new white) and then peel them. Slice thinly.
Then I add a wee bit of veg oil to make it easier to toss.
Then I add a bit of diluted red wine vinegar.

Then lots of chopped dill pickles and a whole onion chopped (usually sweet like vidalia).

Then I add Miracle Whip ... it works well with the tang of the red wine vinegar. I add until I feel it is the right consistency and tastes good!

The salad is always better after sitting for at least a few hours or overnight is even better.

My dad and my husband LOVE this salad and I usually make it the first time on Fathers Day for them! :) So next weekend I will be making it - first time since last summer :)

Yummy, yummy! I like tangy potato salad with a nice pickle taste ... some is too full of mayo and just takes blah without lots of salt :) (like my m.i.l's :rolleyes1 - just horrible!!)
