Potato Salad help needed

My mother, bless her heart, could never master a good potato salad. Her dressing was either way to thick or it would get runny. So, of course, I can't make it either.

I'm looking for something easy, using either Miracle Whip or Mayonnaise (not a cooked dressing).

Also, many, many years ago a neighbor of my Grandmother's brought a potato salad to a picnic. I know it had sour cream and either Miracle Whip or Mayo.

Can anyone help with either of these types of potato salad?

My mom makes the best potato salad, and it's really easy, but it involves the southern cooking art of "eyeballing"-- she adds mayo until it looks and feels right, and then adds a little white vineagr to smooth it out, and a little yellow mustard for tang. She adds a couple chopped boiled eggs, some celery and onion (minced) to the potatoes, and there you go!! Hope this helps...
 
and the only potato salad I like...just made it last nite for dinner..and taking the leftovers to a goodbye picnic tomorrow nite!...cook up your potatoes (up to 5 lbs for a big big bowl)..also hard cook 6-8 eggs...cool the potatoes, cut into cubes, chunks, pieces, whatever you prefer..cut up th egg, add to the potatoes. If you like onions..chop up one med onion and add...in separate bowl..mix miracle whip..about 2 cups or so...and about 1/4 cup regular yellow salad mustard...add to your potato salad and mix (you may need to add more of either miracle whip or mustard..I go by the color..but have been making it for years!)....then add onion salt (if you didn't use onion), garlic powder to taste, salt and pepper...DELICIOUS!

This sounds the same as mine except I add pickle relish instead of onion. I start out by adding a large scoup of mayo and just keep adding a little more until it is right. I only add about 1 tablespoon of mustard as my DH does not care for it (except in potato salad). I leave the salt & pepper for the table. I like more pepper than the rest of the family so I don't add much.
 

Just made some tonight in fact for DD's first birthday party tomorrow. I use about 8-10 potatoes, boiled and chopped. Add 6-8 hard boiled eggs, 4 radishes cut up into small pieces, one stalk of celery chopped, one green onion chopped. Then I add enough Miracle Whip to get everything moist - I use the light variety but you can use the regular version. Add salt and pepper to taste. Top with paprika. I get rave reviews for this recipe and it is soooooo easy! Good luck.
 
Missy28 - that sounds like the same way I make potato salad and I am definitely NOT a Grits! The eyeballing method is the only way I know how to make those sorts of dishes.

Although some of my relatives think I am insane for "ruining" potato salad with mustard!

FYI - Grits stands for Girls Raised (or refined) in the South. And if you're looking for a light hearted book that can be consumed in snitches try Deborah Ford's "Grits: (Girls Raised in the South) Guide to Life". I picked it up last week at Barnes & Noble and laughed my way right through it!

Personally, I like mashed potato salad ...

boil your potatoes and mash them
add enough Miracle Whip until they're creamy
throw in some diced red onion, salt and pepper to taste and refrigerate until blended
(I throw diced Granny Smith apple in mine too - gives it a crunch and slightly sweet balance to the tang of the onion)

Yum!
 
I make an awesome potato salad but it's kind of involved and takes about 3-4 hours to make.
 
I BOIL ABOUT 8 RED POTATO'S NOT PEELED UNTIL COOKED AT THE SAME TIME I BOIL 2 EGGS IN THE SAME PAN AT THE SAME TIME,TAKES ABOUT 1/2 HOUR, DRAIN AND LET EVERYTHING COOL OVERNITE IN FRIDGE, NEXT MORNING PEEL AND CHOP POTATOES, AND EGGS ,PUT IN LARGE BOWL, POUR AROUND 3/4 CUPS OF OLIVE OIL OVER THEM THEN ADD 1 TSP SALT, 1 TSP PEPPER, 1 SQUIRT OF MUSTARD, HELMANS MAYO ABOUT 1- 1 1/2 CUPS MIX RETURN TO FRIDGE AND IT WILL BE READY TO EAT IN ABOUT 2 HOURS,STIR AGAIN BEFORE SERVING, IT TASTES EVEN BETTER NEXT DAY.
 
I also make potato salad by how it feels and looks, rather than by a recipe. ;) Frustrates the heck out of my daughter who wants to know how I make many of my "dishes"...

Anyhow, I use boiled red potatoes, hard-cooked eggs, celery, onion (green onion gives a great taste!), mayo, dijon mustard, and sour cream. A small amount of vinegar or pickle relish can be added for a little zing. I just mix it all together till it seems right, then taste before adding seasoned salt and pepper. A little celery seed makes a nice addition, as well.

You can also substitute cooked pasta for the potatoes for a great pasta salad!

Since no one has posted the way I make mine I will.

I use baking potatoes. Amount of potatoes depends on how much you want to make.
boil them till they are soft but not mussy.
Let them cool
In the meantime I chop, celery, onion, eggs and parsley. The amounts depend on you and how much you like of each.

After you peel the potatoe (I don't like potate skins) and diced them put them in a bowl and pour over them one shot (whiskey glass) of cider vinegar. Mix and let site for about 15 minutes. Then add the chopped veg and sugar, salt and pepper and mayo. Mix. Test taste it. see what it needs. More salt, pepper or sugar. Put in refrigator. Let it get good and cold. I find if I make it the day before it is great the next day,. If you want it to look like egg potato salad add a small drop of yellow food coloring to the mayo
 
I set out about 1/4 c vinegar with several tsps of celery seed and mustard seed in it to soak overnight. Then just add that to regular mayonaise to make the dressing and mix with chopped potatoes, eggs, and green onions.
 
As a lot of you mentioned, I also use the eyeball method, and also the taste and add more method. My potato salad is my own creation, and I and my family seem to like it very well, so here is my version of potato salad

6 to 8 potatoes peeled, boiled, loosely mashed, but not pureed,
bacon pieces
green onions
mayo
mustard
salt/pepper
sometimes relish
boiled egg(optional, I make it without or with, I don't care for eggs)

Mix together, chill as long as possible, sprinkle a little paprika on top.

Hi!

Mines not that different from the rest... I just add a few other ingrediants.. It's good if you like your potatoe salad chunky...

a few stocks of celery diced
5 or 6 sweet pickeles cut like the celery
5 or 6 dill pickles cut the same way
red onion diced to taste the way you like
a little mustard to taste
a little sweet pickle juice to taste
mayo depending on how creamy you like it
3 or 4 shakes of Mrs. Dash seasoning
some pepper and salt
8 potatoes boiled with skin on
8 eggs boiled with the potatoes.

Once the potatoes and eggs are done peel off the skin and each, cube and mix with the other ingrediants!
