Pot Luck...

I am having a hard time trying to figure out what to bring for our pot luck coming up on Friday Night.........

This is with our Church group... we have a pot luck every other week or so and I am running out of ideas of what to bring. I like to bring something that can be dinner (for my kids anyhow...they sometimes can be picky and I want them to have something I know they like)...

I have done:
Homemade mac and cheese
Enchiladas
Lasagna
Fried Chicken
Nachos

There is no telling what anyone else will bring, no theme... and there are usually at least 30 people.

Any ideas would be great!

How about a hearty soup or a tossed salad? I saw a salad recipe that had walnuts and pomengranites (how do you spell that?) and jicama that was cut into star shapes.

We are having a potlock at work for our party and I am at wit's end trying to think of something.

I am leaning toward a salad because everyone is bringing in pies, meatballs, and heavier things. And to top it off, we don't have a microwave nearby!
 
An old standby for me is chicken wings. Just throw a bag in a crockpot with a bottle of either teriyaki or barbecue sauce.

A recent thing I've discovered is crock pot baked potatoes. Pierce each potatoe a few times. Wrap in foil. Cook on low 8-10 hours or high 2 1/2 - 4 hours. Set out some butter, grated cheese, sour cream and chives and you're all set.
 
One of our favorite potluck sandwich things to bring is party sandwiches. You use bakery rolls that come attached together on a piece of cardboard and they are wrapped in plastic for the party rolls it calls for--does that make sense?

Party Rolls
2 packages party rolls
1 lb. shaved ham
1 lb. swiss cheese
2 sticks margarine or butter
3 TBS. poppy seeds-or less
3 tsp. mustard
1 small onion
1 tsp. Worcestershire
Melt margarine, poppy seeds, mustard, and chopped onion on the stove. (*We omit the mustard and onion, so I'm not really sure if you're supposed to put it in with the butter on the stove or layer it with the ham and cheese?*) Cut the bread down the middle with the tops of the rolls on one half the bottom of the rolls on the other half. Pour or use a pastry brush to spread some of your melted mixture on the bottom layer of rolls, layter ham and cheese, spread some more mixture on the bottom of the top half of rolls, place the tops of the rolls (do not pull the rolls apart from each other) on top of the ham and cheese, and spread a little more of the margarine mixture on top. Cover with foil and bake at 325 for 25-30 minutes.

This has always been a big hit at every get together we have served it at! I've also used chicken and turkey in place of the ham. Have fun!
 

An easy appetizer/dinner item that we like is-

1 lb hamburger
1 lb sausage

Cook together, then add

1 lb Velveeta

Stir until melted & spoon on top of sliced Italian or rye bread.

Bake long enough to toast bread. Tasted good hot or after sitting on buffet at room temp. Always goes quickly when we serve it.

Other ideas - chili, tortilla soup or stew in the crock pot.
 
Meatballs! I usually make two crockpots full (both full from one huge $12.00 bag from Sam's Club)... one with a tomato sauce with onions and peppers and the other with a sweet Bar-B-Q sauce with onions in. I lay out hotdog buns nearby on a platter and a bowl of finely shredded Mozzerella cheese, as some people like to assemble meatball subs! These are easily made, effort free, and not to expensive! :thumbsup2

That's funny that you mention this... I was just on the phone with my Hubby and said that maybe I would just pick up a bag of meatballs from Sams! I like the idea of having the hotdog buns there as well!

Are you from North Carolina? It seems only people from there that I've talked to has heard of them...
 
Meatballs sound so good.Yummy. My idea was spaghetti with sauce. Cheap and easy to make.

Hot Turkey Sandwiches. Make a couple of turkey breasts, take the meat off the bone, cut it up or pull apart. Keep it in gravy and serve on hamburger buns.

Another idea would be to get one of those oblong shaped boneless hams (not in a can), have the butcher slice it for sandwiches. Heat it up in a slow cooker with Sprite, OJ, and ground cloves and put it out with hamburger buns.
 
I make "lasagna" using frozen ravioli and sauce. Just cook the ravioli as instructed, layer it in a pan with sauce in between and throw a layer of cheese on the top. You can freeze it at this point for later use (I usually make 2 or 3 at a time), or throw it in the oven to heat. It's easy, cheap, and IMHO yummy!

I almost mentioned that this was a Southern recipe! I got it when we lived in East Tennessee, and have brought it to the Midwest! Thanks for clearing up the onion and mustard too!:)

I agree, these are really good! I haven't made these in years, but now I'm craving them. :)
 
Little Smokies always go over well at any potluck with kids in attendance. My favorite recipe is to throw them in a crockpot with equal parts of Pace picante sauce and honey. They are so good -- sweet and spicy at the same time!!!
 
I find that just plain casseroles go over really well at potlucks with kids and also with single people that don't necessarily get that sort of thing often.

I'd dance around the same dishes you've already mentioned. Maybe a pasta/taco casserole - shell pasta with tomato sauce and taco seasoning with hamburger, cheese, maybe some beans and corn tossed in for good measure. Or do ziti instead of lasagna.

I'd guess there's probably some people thinking "I hope drivencrazy brings her mac and cheese again." It seems like the standards are the first to go at potlucks around here.
 
Party Potatoes

2 bags frozen diced Hash Brown potatoes, thawed
1 large tub French Onion Dip
1 can Cream of Chicken soup
1 can Cheddar Cheese soup
8oz. shredded cheese

Combine and bake at 350 for about an hour.

Not health food, but there is never any left to take home afterward! :)

what about pulled pork or Italian roast beef or BBQ chicken. These can all be put in the crock-pot and ready to go at dinner time.

For the pulled pork, put a pork roast and a bottle of BBQ sauce in and cook all day, for the Italian roast beef, put a beef roast with a can of broth, rotel tomatoes and pepperinci and cook all day and for the chicken throw a bag of breasts in with a bottle of BBQ sauce and cook all day. When you get home, take the meat out, shred it (I empty the juice out of the crock pot) and put the meat back in. You can serve these with buns.

You can also put chicken breast in with a jar of salsa and cook all day and then serve with tortillas for taco or burritos.
 
I like to bring sweet and sour meatballs to our church potlucks...bag of meatballs, can of grape jelly, bottle of chili sauce. Cooked in the crockpot is so yummy!
 
Taco Pie

2 lbs ground beef (or turkey)
1 package taco seasoning
1 1/2 cups salsa (any kind you prefer - we like medium)
1 1/2 cups shredded cheese
1 package crescent rolls
sour cream

Brown ground beef (or turkey) and drain, add in package of taco seasoning (I add about a 1/4 cup of water - just enough to "melt" the seasoning in), the salsa and 1 cup of cheese. Press the crescent rolls into a deep dish pie plate to form a "crust". Spoon in beef mixture. Bake at 350° for 30 min. Top with remainder of cheese and bake long enough to melt it (a couple of minutes). Serve with sour cream (and more salsa if you want).


This is a huge hit at my house. I've done it with both ground beef and ground turkey and its come out good both ways.
