Pot Luck...

An old standby for me is chicken wings. Just throw a bag in a crockpot with a bottle of either teriyaki or barbecue sauce.

A recent thing I've discovered is crock pot baked potatoes. Pierce each potatoe a few times. Wrap in foil. Cook on low 8-10 hours or high 2 1/2 - 4 hours. Set out some butter, grated cheese, sour cream and chives and you're all set.


I've never done baked potatoes in my crock pot but it sounds great. Do you need to put anything on the bottom of the bowl or do you just rest the potatoes in foil right on it? I just wasn't sure if the foil would burn but I guess it's not all that different than the liners that are out now?

No, nothing needed. Just put them right in. Some of the foil will darken, but I've never had it burn.
 
I find that just plain casseroles go over really well at potlucks with kids and also with single people that don't necessarily get that sort of thing often.

I'd dance around the same dishes you've already mentioned. Maybe a pasta/taco casserole - shell pasta with tomato sauce and taco seasoning with hamburger, cheese, maybe some beans and corn tossed in for good measure. Or do ziti instead of lasagna.

I did think about the mac and cheese again... I made a HUGE pan (over sized 9x13) and there was only a few noodles left, but was hoping for something different. What do you mean by a plain casserole?

what about pulled pork or Italian roast beef or BBQ chicken. These can all be put in the crock-pot and ready to go at dinner time.

For the pulled pork, put a pork roast and a bottle of BBQ sauce in and cook all day, for the Italian roast beef, put a beef roast with a can of broth, rotel tomatoes and pepperinci and cook all day and for the chicken throw a bag of breasts in with a bottle of BBQ sauce and cook all day. When you get home, take the meat out, shred it (I empty the juice out of the crock pot) and put the meat back in. You can serve these with buns.

You can also put chicken breast in with a jar of salsa and cook all day and then serve with tortillas for taco or burritos.

There is a lady that did the pulled pork, but I'm really liking the sound of the chicken! Thanks!

I like to bring sweet and sour meatballs to our church potlucks...bag of meatballs, can of grape jelly, bottle of chili sauce. Cooked in the crockpot is so yummy!
Still thinking of them meatballs as well! Just don't know if I will make it to Sams or not! If I don't before tomorrow, I deffently will pick some up before the next time! Thanks!

Taco Pie

2 lbs ground beef (or turkey)
1 package taco seasoning
1 1/2 cups salsa (any kind you prefer - we like medium)
1 1/2 cups shredded cheese
1 package crescent rolls
sour cream

Brown ground beef (or turkey) and drain, add in package of taco seasoning (I add about a 1/4 cup of water - just enough to "melt" the seasoning in), the salsa and 1 cup of cheese. Press the crescent rolls into a deep dish pie plate to form a "crust". Spoon in beef mixture. Bake at 350° for 30 min. Top with remainder of cheese and bake long enough to melt it (a couple of minutes). Serve with sour cream (and more salsa if you want).


This is a huge hit at my house. I've done it with both ground beef and ground turkey and its come out good both ways.

This sounds great as well! I am copying all these great ideas and putting them in a folder for pot lucks so I have a great list to choose from!

My normal potluck contribution is a tossed salad and a couple bottles of dressing.

If I know there will be a lot of of kids there (or if my kids will be there) I make a loaf of bread worth of peanut butter and jelly sandwiches wtih the crusts cut off and cut in 1/4s, then put them on a big platter. Every time I've ever done this, they ALL get eaten and people (the parents) tell me that it was a great idea.
 
I love the peanutbutter and jelly idea! I did think about doing pb&j roll-ups (made on tortillas) but thoese sometimes get a bit messy with the jelly. I will put this in my folder and use it soon!

I was going to go with the meatballs and mozz cheese and hotdog buns.... well we were at my family's house (brother and SIL) and we were talking, she was planning on meatballs too! So since she has meatballs already, I am going to make the "Taco Pie" tonight for the pot luck! I can't wait to try all the things listed here!
