I'd like to hear what your Thanksgiving menus are!
What are the "must-do" items? Any traditional items specific to your family?

In my family we always start with soup - although sometimes the soups change.This year is Pumpkin and White Corn Bisque.
We have an appetizer - usually stuffed mushrooms or flatbread - this year it's apple slices, brie en croute and crackers, raw celery and carrots and olives for appetizers.

The main menu is

Turkey and gravy
cranberry sauce
stuffing (bread and veggies)
green bean casserole
peas and carrots
baked sweet potatoes
corn
canned sweet potatoes with orange juice and marshmallows
mashed potatoes
biscuits, rolls, rye bread

Dessert is

Pecan Pie
Chocolate Pecan Pie
Lemon Chiffon Pie
Apple Pie
Cherry Pie
Poppyseed Cake
Pumpkin Creme Brulee (we usually do pie, but I want to try something different)
Ice Cream
Homemade Hot Fudge Sauce

My SIL's family does an Italian feast

Escarole and Bean soup
Stromboli
Antipasto Platter

Penne and Marinara Sauce

Turkey, gravy
cranberries
Ham
Mashed Potatoes
Stuffing
corn
green beans
broccoli and cheese
sweet potato casserole
bread and rolls
Lasagna

Dessert
Apple Pie
Spice Cake
Tiramisu
Cookies
Ice Cream


What about you?
 
We will be having the following:
1 deep fried turkey
1 roasted turkey
baked macaroni and cheese
green beans (for those who do not like green bean casserole)
green bean casserole
carrots
scalloped corn
sweet potatos with the little marshmallows on top
mashed potatos
my mom's homemade noodles
cranberry sauce

For Dessert:
pecan pie
sweet potato pie
plain cheesecake
double chocolate cheesecake
pineapple upside down cake
 
Sounds great- homemade noodles - I am so impressed!

About as traditional as they come

Turkey (a 21 lb-er)
Stuffing in the bird (my family)
Bread stuffing baked outside the bird (DW family)
Mashed taters
Sweet Taters (Mrs. Paul's - DW favorite!!!)
Corn
Peas
Glazed carrots
cranberry sauce
Gravy
Squished squash

Dessert
Pies (MIL is bringing them)
Ice cream
SIL is bringing something - don't know

And plenty of football!!!!!

Growing up my mother always made a giblet stuffing. When my parents divorced this disapeared from my mother's table. When asked, she said it was my father's family recipe and she just absolutely HATED it :rotfl2: Anything to keep the peace, huh>???

My mother was one of ten kids growing up - my grandmother used to cook TWO 25 lb turkeys - one just for sandwiches!!!
 

We're not traveling this year and just keeping it intimate. So, there'll only be 4 of us and we are having:
Turkey breast
Ham
Chicken and dressing
Garlic Cheddar mashed potatoes
Broccoli Cheese, and Rice casserole
Green beans (possible green bean casserole, not sure yet)
Ceaser Salad

Dessert:
Chocolate chip pecan pie
Apple Pie
Lemon cheesecake bars
 
I started with a list of about 25 things and narrowed it down to what is below. Many of the things on my list were things only I would eat so they were woefully omitted.....rats....

Ended up with:

Deviled eggs
veggie tray with dill dip and also pickles, olives

Turkey breast
small ham that I just happen to have

mashed potatoes
gravy
bread stuffing in the crock pot
cresent rolls
corn
broccoli cheese casserole (not for me, blech!)
cranberry sauce

fruit salad
Apple crisp
pecan tassies

still looking for more ideas though

If your family doesn't like green bean casserole, you can make green beans Polonaise. My family makes this all year long. Basically you melt a stick of butter. Steam/microwave 2 lbs. green beans and add 1/2 the butter. Heat the remaning butter and add 1 cup of bread crumbs and brown in the butter. You can add onion powder or garlic powder or some sauteed onions or garlic to this, if you like. Sprinkle the crumbs over the green beans when you serve them.

I'd love to hear how you do stuffing in the crockpot.

I would like the green bean polonaise but DH wouldnt touch it! no green beans for him. :confused3

As for the crock pot stuffing you make your basic "whatever you want in it" stuffing, mix it all up and then add chicken broth. The recipe I use has about 3 cups which seems like a lot. You then put it in the crock pot and cook on high for 45 minutes and low for 4 or 5 hours. I did it once before and it turned out pretty good and if you are not using the crock pot for something else it helps free up the oven if you normally bake it in a casserole. I think I got the recipe from allrecipes.com
 
We ditched a bunch of the must do's last year. Mom passed three weeks before Thanksgiving last year, and since many dishes were what were on the table when I was a kid, I couldn't bring myself to make them. Still not quite up to making them this year.

Appetizer this year is baked brie

Younger son is making pumpkin soup, and he's excited to be sharing what he's learned in cooking school.

Honeybaked Ham (DH's not a fan of turkey, so we have this every year)
sweet potato souffle with pecan topping
roasted garlic mashed potatoes (or son's mashed cheesy potatoes)
cornbread stuffing wrapped in bacon (a nod to MIL's sausage stuffing in bacon)
broccoli bake (vaguely resembles green bean casserole)
homemade biscuits
cranberries

For dessert, we'll have Kevin's homemade apple pie. Note to self: don't forget the blue bell ice cream!

If it were the typical year, I'd be making candied sweet potatoes, asparagus, turnips and either eggplant parm or lasagna. My mom's table always had an italian dish on it-and we're Irish!

Sounds great - esp. the ravioli! What about the almost apple pie? What makes it almost?
 
These menus look yummy. Keep on posting guys, when I find one nearby, I am crashing the party, as I will be alone this year and dear partner is out of town. :) :(

Where are pretty traditional too:

No real fancy appetizers or anything. My mom's hosting this year and she always puts out cheese, crackers, chips, that sort of stuff.

Dinner:

3 turkeys (too many people to feed & everyone wants left overs. So my mom will cook her's on Thanksgiving, my sister and I each cook one the day before keep about 1/3 at home for leftovers, then take the rest to mom's. Each one is about 20 #'s). So, yep we'll have 60#'s of turkey. But this way everyone gets some to take home.
Mashed Potatoes
Gravy
stuffing (mom makes it homemade)
Corn
Asparagus w/ butter and lemon seasoning
Cranberry Sauce (the canned stuff)
Green Bean Casserole
Broccoli w/ cheese
Some squash w/ brown sugar-- I don't eat it and don't know what it is
dinner rolls
Bread- pumpkin, banana nut, and usually a cranberry orange
Some sort of fruity/ambrosia salad (I have a new recipe this year I'm making but don't know what it's called)

Dessert:
Pumpkin Pie
Apple Pie
Pumpkin Ginger Triffle
Pecan Pie
Birthday Cake--- my birthday is on Thanksgiving, my dh's is the day after Thanksgiving, and my grandmother's is Saturday. So we got a 3 in a row there. Told my mom cake wouldn't be needed but she's insisting.
 
My mom is cooking everythiing :)

Main course:

pumpkin pie
cocunut custard pie
chocolate pudding pie

And 1 BIG BELLY ACHE!!!!!

The bottom crust is a short crust of butter, flour and sugar. The top crust is a crumble of the crust ingredients. I have never tried it, but it looked good.
