I'm a Lacto Ovo Vegetarian.
I finally gave up meat, etc... I was never really fond of meat and it was always the last thing left on my plate. Anyhow, I hope to be going to WDW soon and was looking for meal ideas. I'm pretty easy going and looking for items already on menus for me to eat.

Specifics:
Don't Eat: pork, beef, seafood, poultry
Do Eat: eggs, dairy, and plant foods

There are two places to get vegetable tempura:

Matso Noma (sp) Lounge - Japanese Pavillion
Kimonos at the Swan

Both have great vegetable tempura. Kimonos also has the peapod 'peanuts'...I forget what they are called. Both also have a sushi bar where I'm sure they would make vegetable rolls!
 

My wife is Lacto Ovo Vegetarian as well, and we found great meals at Spoodles (flatbreads), the Japanese teppanyaki restaurant (tofu was her "meat" at the "cook before your eyes" tables), Whispering Canyon (veggie pasta), Rainforest cafe (forget, think it was a pizza of some sort), Beaches & Cream (veggie burger, onion rings), Cape May Cafe (breakfast foods - a buffet) to name a few. We hear that Kona has great veggie options (you won't find them on the menu but ask them for your options).

I can't get enough vegetarian suggestions.

Lunch: Tangerine Cafe taboulli and hummous sandwich with yummy sides

Dinner: Le Cellier veggie and noodle dish (sans shrimp). Sorry, I cannot remember the name of it, or if it's even on the menu anymore since last Sept. It was brothy and DELICIOUS.

Epcotfan, not only is Epcot my favorite park, but I'm also a big fan of homestarrunner! Strong Bad's e-mails are the best part of that site. :p
 

I am a lacto-ovo vegetarian also.

My favorite is the coral reef sandwich at Columbia Harbor House Olive bread, hummus, broccoli slaw, & tomatoes.

Other things that are good:

-veggie lasagne at the Land Foodcourt
-taco salad without the chicken at Cantina de San Angel in Mexico (the counter service one)
-veggie sandwich or wrap (changes from time to time) at Tusker House in AK
-Vegetarian Salad at Restaurantosaurus in AK
-Kit Carson salad without Chicken at Pecos Bills in MK
-veggie eggrolls in the eggroll wagon in Adventureland in MK (I have been told they are all vegetarian many times and have read it online also from other guests)

Also I like the pizza at Pizzafari, Toy Story Pizza Planet, and the food courts (like ASMO or POR)

Of course the Mickey ice cream bars, ice cream cones, & ice cream sandwiches are good.
 
I am also vegetarian and practically live off my Vegetarian Bible = Vegetarian Walt Disney World, 2nd Edition: The Essential Guide for the Health-Conscious Traveler.

This second edition is due out this month and is essential for a vegetarian WDW-fanatic!

Those peapod "peanuts" are called edamame -- they're steamed and salted soybeans and they are good!

Kimonos does make great vegetable rolls.

One of my favorite vegetarian meals at WDW is the portobello mushroom sandwich at ESPN. Grilled portobellos with roasted peppers, swiss cheese and chive and garlic cream cheese. It's awesome!

Also, check out the vegetarian guide at wdwig.com. There are listings forquick service, full service and other commentaries on being veggie at the parks.

I did check out the wdwig veg guide the other day and it does have some good suggestions. Please keep providing your favorites...I love hearing what others found to be tasty as opposed to looking at a menu.
 
Peco's Bills has a great salad. I think it's called Kit Carson's salad, and it can be ordered with or without grilled chicken. I've had it both ways (on 2 separate visits), and much preferred it without the chicken.
 
My favorite restaurant is Akershus in Norway. They have a great smorgasbord with all kinds of different foods. Lots of cheeses to try, and interesting stuff like mashed rutabaga, which is really yummy. Non-vegetarians like it too.

I also have to second the Columbia Harbour House recommendation. The Coral Reef sandwich and the Vegetarian Chili in a bread bowl are great and filling.

A good thing to do is go to a highly recommended restaurant that serves breakfast. The first meal of the day usually has a lot of vegetarian items to choose from, and you can sort of "power up" for a day of Disney. Tonga Toast at the Kona Cafe (Polynesian Resort) is great. It's great to make at home, too!:p
 
You absolutely must eat at Boma at Animal Kingdom Lodge for dinner. They have a whole section on the dinner buffet with just vegetarian items. My favorites: Kofta (lentil nut balls with a yoghurt dressing) and the vegetarian couscous. Speaking of couscous, Restaurant Marakkesh in Epcot has a great vegetarian plate. Hollywood Brown Derby (MGM) makes a killer tofu/thai noodle dish. Several places, e.g. 50s Prime Time (MGM) have a veggie burger available that is not on the menu, so you should ask. For counter service, I like the vegetarian chili in a bread bowl at Columbia Harbor House in MK and the veggie pizza at Pizzafari in AK. I've been doing WDW vegetarian dining for years and gets better and better all the time.

Eat at Boma. They have tons of great dished with no meat. I LOVED the different hummus that they had ( they were the highlight of my meal!). I eat meat but actually only had a corned beef dish which name I can't remember but i left stuffed. Everythin I ate was meat free. Yummy...can't wait to go back!
 
Boma also always has at least one vegetarian soup-well worth trying. Jiko has a beans and grains dish that is out of this world and extremely filling!
 
I agree with punkin. The marinated tofu and grain dish at Jiko is the best. In fact, I'm taking the whole meat eating family to Jiko during our next trip just so I can have this dish again!

I ***LOVE*** edamame! We snack on them practically every other day! MMMMMMM!!!!!!!!!

50sPT also has an excellent stuffed tomato with SOY cheese!
 
The Kit Carson is really good as is the Veggie Platter in Morocco. I got tired of eating fries and meat and enjoyed some good veggie meals.
 
i am a lactose intolerant vegetarian who doesn't eat eggs unless they are in something like cake.
i am very picky- but do have some favs

i loved Boma!!! the head chef even took me around to show what i could and could not eat. the food was amazing!!!

cali grill made me a vegetarian platter with several different and interesting things- (you have to ask about it- its not on the menu!!)

at MK columbia harbor house- the vegi chili in the bread bowl is awesome! the brocolli slaw and humus sandwich is very good as well!

at epcot- in the counter service part of mexico- awesome nachos- without the beef!

for sit downs as long as you tell them you diet- they do pretty much everything!!!:D
 
I'm voting for the Brown Derby's Thai noodle bowl with coconut-crusted tofu. It's my absolute favorite.

And the veggie burger at ESPN is great. It tastes flame-grilled.

I also liked the portobello mushroom/veggie burger at the Garden Grove Café in the Swan is really good too. It's huge and it comes with hummus and toast points.

And of course, the bakery in France is very veggie-friendly!
